the grapes. The flesh of red grapes is pale yellow: most of the
color, flavor, and aroma compounds lie within the skin.
Traditional red wines are fermented with the skins. The
action of fermentation naturally extract color & flavor from the
skins. But until now, winemaking kits have been made with
different techniques. Without alcohol (and by law,
winemaking kits can’t contain alcohol) some of the desirable
skin compounds are very difficult to extract.

skins and packaging them separately, Crushendo
