A copper-colored, medium-bodied, German-style ale with lots of malt flavor. "Altbier" means "Old Beer" in German. This name comes from the fact that it's fermented with an ale yeast; which lager-loving Germans consider old-fashioned. This beer has a clean, crisp taste, especially for an ale. Hop bitterness and aroma are moderate, with malt being the primary flavor. Recipe uses two types of imported German hops, combined with a German-style malt extract & German yeast strain. This gives much more authentic results than commonly-used British malt extract.

A beautiful looking amber ale. Medium body with plenty of malt characteristics including the flavor of caramel malt. Hop flavor and aroma are also apparent, but the beer is not extremely bitter. Three different types of hops are used to achieve a moderately assertive hop character, which balances the caramel malt's sweetness. The effect is both complex and satisfying. A good example of many beers from popular microbreweries.

This might be the biggest, strongest beer you'll ever brew! Deep copper color, with very full body and intense malt flavor. The maltiness is balanced with plenty of imported British hops. Belgian Dubbel Dark Trappist Ale

Style: Belgian Dark Trappist Ale

There is a lot of variation in Belgian and Belgian-style Trappist ales.  Our Belgian Dubbel recipe is brown in color, and moderate in alcohol strength. This recipe is all about malt - lots of malt flavor and aroma with a touch of cognac on the palate from the addition of imported Belgian candi sugar (beet sugar) and raw kosher honey. There is little or no hop bitterness, and no hop aroma. This beer is good to drink right away, but it also ages very nicely into a surprisingly mellow beverage.

Belgian Trippel Trappist Pale Ale

Style: Belgian Golden Trappist Ale

There's a lot of variation in the Trappist style ales.  Our Belgian Trippel is relatively pale in color, has a strong bread-like maltiness, and it's stronger in alcohol.  No lactic acid bacteria are during fermentation, so there is no acidic sourness in the flavor profile.  Made with continental European hops, a combination of German and Belgian barley malts and Belgian candi sugar (beet sugar.)  Trippel should be bottle aged for at least 3-6 weeks, but will continue to improve for many months.

This is the strongest of the Trappist-style ales.  This is a beer that will hold up to many years of aging, and will definitely improve during its first year in the bottle.  Those choosing to keg this beer should set their system for a moderately low carbonation level, since the head-retention character of this beer is phenomenal!  With twice as much malt as a normal-strength beer, this is an extremely full-bodied, malty beer that's brewed with a combination of toasted, crystal, and de-husked roasted malts, and balanced with classic European hops.

Despite the name, this is not a bitter-tasting beer. The "ordinary" style is the everyday drinking beer in Great Britain. The word bitter actually refers to the use of hops; in the distant past before hops were commonly used, most beers were sweet. There are stronger, hoppier British ales, such as ESB (Extra Special Bitter) Pale Ale, and IPA (India Pale Ale.) But ordinary bitter is an easy beer to like. Its modest maltiness and modest bitterness, medium body and a lower carbonation level make for easy drinking. This recipe is made from imported British malt, hops, and grains.

It takes a lot of ingredients to make a fruit-style wheat beer right, but the results are worth it!  After all, you can't expect much if you just throw some blackberry flavoring into a plain wheat beer. Our blackberry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless blackberry puree. The puree is seedless and sterile, which means you don't have to spend time removing tiny seeds and crushing fruit. The natural fruit sugar in the pureed blackberry has the bonus side effect of boosting the alcohol content! To round out the fruit profile, the recipe also includes 4 ounces of natural blackberry flavoring. At bottling time, add the blackberry flavoring until the beer is perfect for your taste.  Also included with this recipe is a packet of pectic enzyme, which is necessary to remove the haze caused by real fruit.

Blond Ale

This new style is a variation on the "Pale Ale" theme, made popular by microbreweries and brewpubs. The body and color are lighter than British pale ales, which tend towards full body and amber color.  Blond ale's hop bitterness is reduced, but it still has the generous hop flavor and aroma of an IPA. This beer is easy to drink; Blond Ale has been quite popular since we introduced it in 1999. A great hot weather beer, or for any time you want a lighter beer which has interesting flavor and aroma.

A strong, full-flavored lager beer. Bock beer has big malty taste, deep copper color, and medium-full body. The flavors of malt and caramel dominate the moderate amount of hops used. There is no hop aroma. With 9.5 pounds of malt extract, we don't skimp on ingredients for our bock kits! (There are a lot of weak bock kits on the market.) This lager ferments well at any steady temperature between 48-65 degrees, but thanks to the "Tuborg" yeast strain we use, you also get good results at room temperature. Bocks fermented at room temperature will benefit from some extra bottle aging time.  Bock, like other strong lagers, benefits from cold aging. You should store the bottles at room temperature for at least 2-3 weeks while carbonation develops, then move the bottles to a cool place or into a refrigerator if you have space.

Bock - German Doppelbock

Style: German-style Doppelbock

This is a very strong, full-bodied lager beer. Doppelbock is the strongest of all German-style beers. Roasted malts contribute color to this beer, but the flavor is that of milder, sweeter malts. Alcohol content is quite high, and hop bitterness is just sufficient to prevent the malt sweetness from being cloying. However, hop bitterness is perceived as being low, while hop flavor and aroma are barely present.  With 11 pounds of malt extract, we don't skimp on ingredients for this one! (There are a lot of weak doppelbock kits on the market.) This is a very strong beer so the flavor will improve a lot with age, especially for the first 6 months. Store the bottles at room temperature for at least 2-3 weeks while carbonation develops, then move them to a cool location if you have one available.

Bock - Weizenbock

Style: German-style Weizenbock or Wheat Bock

Color: Amber

Weizenbock is another strong German beer.  But unlike the other bock styles, it's based on wheat malt and uses an ale-based Bavarian wheat beer yeast instead of a lager yeast. This is the powerhouse of all German wheat beers!  It's very full-bodied and rich compared to other wheat beers, and while the hop level is modest, it's definitely part of the flavor profile.

Our cherry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless cherry puree. The puree (made from a blend of sour cherries and dark sweet cherries) is seedless and sterile, which means you don't have to spend time removing seeds and crushing fruit. The natural fruit sugar in the pureed cherries has the bonus side effect of boosting the alcohol content! This is truly a connoisseur's beer.  It has tons of fruit flavor and aroma, with a tart sourness that comes from the presence of lactic acid bacteria in the fermentation.  The recipe includes over 6 pounds of sterile, seedless cherries, which saves you lots of time compared to removing seeds and crushing the fruit yourself. There's also 4 ounces of cherry flavoring, pectic enzyme, Belgian candi (beet) sugar, and a special live yeast culture with three strains of wild lambic bacteria. If you keg your beer, you can sweeten your Lambic just before force carbonation, and the results will be in the style of Lindemans lambic beers. We're offering a second British Pale Ale, "Pepperpot Pale Ale," to satisfy popular demand.  Back in 1999 we had a promotional Pale Ale recipe kit that was such a huge success that our customers demanded more after the coupon ran out, so here it is!  Compared to Rockfish Ale, It features a little more caramel and toffee flavors, and cuts back a bit on the hops.  You'll enjoy the deep amber color, moderately full body, and clean flavor profile.  The "fruity" ester flavors (one person's wonderful fruity flavor is another person's dirty fermentation profile) which predominate so many microbrewed Pale Ales are very subdued in this recipe, due to the clean-tasting yeast strain used.  This is what makes the flavor of Pepperpot Ale so clean.  The effect is emphasized even more if you can ferment it at a slightly cooler temperature, in the range of 60-68 degrees, but normal room temperature also gives good results.

Do you like Pilsner Urquell or Budvar?

This is our version of the style that originated the Pilsner name.  Czech pilsner is a moderately-light bodied beer with golden color.  Imported hops from the Czech Republic and Germany are used for flavor and aroma.  Our "Home Brewdvar" recipe uses a large amount of relatively low-power hops to achieve its highly-hopped flavor, so it's rich in secondary hop characteristics instead of just plain bitterness.  This recipe ferments well at a wide range of fermentation temperatures, thanks to the authentic Czech strain of "Tuborg" pilsner yeast we use.  Good results can be achieved at temperatures between 50 and 74 degrees, so a good comfortable room or basement is all you need.  Czech Pilsner that's warm-fermented will mellow out a lot if you give the bottles some cold lagering time in the refrigerator after they've had a chance to carbonate.

Chocolate Stout is similar to classic Irish-style stout, except that the dark grains used in Chocolate Stout include chocolate malt in addition to the roasted barley that's used in Irish Stouts.  As you would expect from a stout, this beer is very dark and full-bodied.  Chocolate malted barley is named for the color of the grain - it's dark brown when it comes out of the kiln.  The resulting flavor is something between chocolate and roasted coffee.  Instead of using chocolate or cocoa powder, which just makes the beer an oily mess, we include a liquor-grade chocolate flavoring extract with this recipe.  This is similar to the process used to make Young's Chocolate Stout.

Everyone loves this style, but we had a tough time replicating it. Real strawberries added to blond ale were messy and lacked enough "punch" to effect the flavor, and regular strawberry extracts tasted very fake - or they tasted like the wrong thing. German wheat beer is light and crisp, and has less hop character than American wheat beer.  The predominant flavor of German wheat beers comes from the use  of special yeast, which produces fruity-esters to a greater or lesser degree. These fruity esters can make the beer taste like someone spiced it with banana, clove, and nutmeg - but these flavors all derive from the yeast, no fruit or spice is used.  Higher fermentation temperatures of 75-80 degrees will increase ester production in almost any yeast, while lower temperatures 65-70 degrees will minimize ester production.

Wit beer is a very pale beer that's served cloudy.  This recipe has a moderately light body and a low level of flavor and aroma hops.  It's a light and delicate wheat beer made with a special yeast culture that produces flavors which are tart and slightly phenolic. This recipe is also spiced with coriander and curacao orange peel in addition to noble hops. Witbier is different from other wheat beers not only because of the spices, but also due to the use of raw, unmalted wheat.
