Item #71001a
Altbier Recipe Kit
Style: German-style Altbier   3.6% alcohol by wt. / 4.5% alcohol by vol.   color: copper

A copper-colored, medium-bodied, German-style ale with lots of malt flavor. "Altbier" means "Old Beer" in German. This name comes from the fact that it's fermented with an ale yeast; which lager-loving Germans consider old-fashioned. This beer has a clean, crisp taste, especially for an ale. Hop bitterness and aroma are moderate, with malt being the primary flavor. Recipe uses two types of imported German hops, combined with a German-style malt extract & German yeast strain. This gives much more authentic results than commonly-used British malt extract.

Recipes are available in 3 different formulas; (1) Malt Extract w/ Steeping Grains, (2) Partial Mash, or (3) All Grain.

Item #71011a
Amber Ale Recipe Kit
Style: American-style Amber Ale   3.6% alcohol by wt. / 4.5% alcohol by vol.   color: amber

A beautiful looking amber-colored ale. Medium body with plenty of malt characteristics including the flavor of caramel malt. Hop flavor and aroma are also apparent, but the beer is not extremely bitter. Three different types of hops are used to achieve a moderate level of bitterness, which balances the caramel malt's sweetness. The effect is both complex and satisfying. A good example of many beers from popular microbreweries.

Style: American-style Amber Ale   4.3% alcohol by wt. / 5.4% alcohol by vol.   color: amber

This recipe kit is one of our top ten best-sellers, with an inviting red-amber color with a rich white head. This beer is very popular with any group of beer drinkers. A medium-bodied beer with assertive hop characteristics and plenty of malt and caramel malt flavor.  This recipe uses a combination of British and American hops for flavor and aroma. Alcohol content is boosted, too.

Item #71081a
Barleywine Recipe Kit
Style: English-style Barleywine   7.3% alcohol by wt. / 9.1% alcohol by vol.   color: copper

This is the biggest, strongest beer you'll ever brew! Deep copper color, with very full body and intense malt flavor. The maltiness is balanced with plenty of imported British hops. This recipe comes with 14 pounds of imported British malt extract and 7 ounces of hops! A beer this strong may taste a bit rough when it's young, but it's fantastic after some bottle aging time. We suggest aging this beer in bottles at room or basement temperature for at least 4-6 months for best flavor. It will continue to improve for over 2 years!

Item #71091a
Belgian Dubbel Dark Trappist Ale Recipe Kit
Style: Belgian Dark Trappist Ale   4.4% alcohol by wt. / 5.5% alcohol by vol.   color: brown

There is a lot of variation in Belgian and Belgian-style Trappist ales.  This one is brown in color, and moderate in alcohol strength. This recipe is all about malt - lots of malt flavor and aroma with a touch of cognac on the palate from the addition of imported Belgian candi sugar (beet sugar) and clover honey. There is little or no hop bitterness, and no hop aroma. This beer is good to drink right away, but it also ages very nicely into a surprisingly mellow beverage.

Item #71601a
Belgian Trippel Pale Trappist Ale Recipe Kit
Style: Belgian Pale Trappist Ale   5.8% alcohol by wt. / 7.2% alcohol by vol.   color: golden

There's a lot of variation in the Trappist style ales.  This one is relatively pale in color, but stronger in alcohol.  This isn't one of the Belgian styles which uses lactic acid bacteria during fermentation, so there is no acidic sourness in the flavor profile.  Made with continental European hops, a combination of German and Belgian barley malts and Belgian candi sugar (beet sugar.)  Trippel should be bottle aged for at least 4-6 weeks, but will continue to improve for many months.

Item #71681
Belgian Quad Recipe Kit
Style: Belgian Trappist Ale   7.4% alcohol by wt. / 9.2% alcohol by vol.   color: Copper

This is the strongest of the Trappist-style ales.  This is a beer that will hold up to many years of aging, and will definitely improve during its first year in the bottle.  Those choosing to keg this beer should set their system for a moderately low carbonation level, since the head-retention character of this beer is phenomenal!  With twice as much malt as a normal-strength beer, this is an extremely full-bodied, malty beer with just a touch of classic European hops.

Item #71101a
Bitter (British Ordinary) Recipe Kit
Style: English-Style Ordinary Bitter   3.3% alcohol by wt. / 4.1% alcohol by vol.   color: amber

Despite the name, this is not a bitter-tasting beer. The "ordinary" style is the everyday drinking beer in Great Britain. The word bitter actually refers to the use of hops; in the distant past before hops were commonly used, most beers were sweet. There are stronger, hoppier British ales, such as ESB (Extra Special Bitter) Pale Ale, and IPA (India Pale Ale.) But ordinary bitter is an easy beer to like. Its modest maltiness and modest bitterness, medium body and a lower carbonation level make for easy drinking. This recipe is made from imported British malt, hops, and grains.

Item #71111a
Blond Ale Recipe Kit
Style: American-Style Blond Ale   3.4% alcohol by wt. / 4.2% alcohol by vol.   color: golden

This new style is a variation on the "Pale Ale" theme, made popular by microbreweries and brewpubs. The body and color are lighter than British pale ales, which tend towards full body and amber color.  Blond ale's hop bitterness is reduced, but it still has the generous hop flavor and aroma of an IPA. This beer is easy to drink; Blond Ale has been quite popular since we introduced it in 1999. A great hot weather beer, or for any time you want a lighter beer which has interesting flavor and aroma.

Do you like Samuel Adam's Boston Ale? This recipe kit is our version of the most famous microbrewed ale in America. Boston Ale is stylistically similar to a British pale ale, but it uses lots of noble German hops added for flavor and aroma. The flavor of hops is complimented by medium-bodied maltiness with a touch of caramel sweetness in the finish.

Item #71141a
Brown Ale (American) Recipe Kit
Style: American Brown Ale   3.6% alcohol by wt. / 4.8% alcohol by vol.   color: brown

This recipe kit makes a brown ale in the tradition of many fine American microbreweries.  The beer has deep brown color, medium body, and lots of flavor. American Brown Ale is a moderately malty beer, with the flavor and aroma of hops from the American northwest to add complexity. There are a range of malt flavors, including toasted malt, caramel malt and chocolate roasted malt, but there is much less malt sweetness compared to the English style brown ales. Overall, a nice ale which has real character without heavy body.

Brown Ale (English) Recipe Kit
Style: English Brown Ale   4.2% alcohol by wt. / 5.2% alcohol by vol.   color: brown

Do you like Newcastle Brown Ale? One of our most popular recipes, our version of the famous British ale has the same beautiful reddish-brown color. The beer is medium-bodied but rich in malt flavor. This recipe is made with 5 different British grains, plus British malt extract, British hops, and raw Demerara sugar for authenticity. This recipe's popularity comes from the satisfying blend of toasted-malt, caramel, and toffee flavors. Hops are present as a balancing influence without any aggressive bitterness or strong hop flavors.

Canadian Ale/Cream Ale Recipe Kit
Style: North American Cream Ale   3.6% alcohol by wt. / 4.5% alcohol by vol.   color: golden

Do you love Canadian beers like Molson or Labatt? Canadian Ales like this one are also known as Cream Ales. Cream ales don't contain any actual cream.  They're light golden colored, with a delicate body and a touch more hops than the big American beers. You'll appreciate this beer if you like good beer and your friends drink commercial beer, this recipe bridges the gap.

Item #71201a
E.S.B. Recipe Kit
Style: English Strong Bitter   3.9% alcohol by wt. / 4.9% alcohol by vol.   color: amber

Extra Special Bitter is a traditional English ale which is stronger than the Ordinary Bitter, but less strong than Pale Ale. You could consider E.S.B. to be the beer on which American microbreweries have based many of their Amber Ales.  E.S.B. is medium-full bodied, with a deep amber color and fantastic head retention. This beer has enough hops for nice aroma and flavor, but hop bitterness isn't as powerful as in Pale Ale or IPA. Imported British malt, hops, yeast and grains are used exclusively in this recipe.

Hopfest Brown Ale Recipe Kit
Style: Microbrewery-Style Hopfest   4.9% alcohol by wt. / 6.1% alcohol by vol.   color: brown

Do you like Pete's Wicked Ale? This is our version of a famous microbrew. Assateague's Awesome Ale is a little bit hard to categorize: think of it as either a "Dark IPA" or a "Strong Brown Ale." The beer is brown in color, but has the high hop flavor and aroma of a pale ale or IPA. The crisp hop bitterness is derived from generous portions of Northwestern US hops. There's also plenty of malt for body and strength, and a blend of specialty grains for color and aroma.

Do you like Dogfish Head Ale?  The beer style of Imperial Ale has gained popularity in recent years.  This one is a little stronger than your average IPA, and uses more hops than a normal IPA would.  Additionally, there is less non-fermentable sugar in the beer because crystal malt's presence is quite low.  The result is a medium-full bodied beer wit aggressive hop bitterness, rich hop flavor, and powerful hop aroma.

Style: Imperial (Pale) Ale   7.5% alcohol by wt. / 9.4% alcohol by vol.   color: Copper
Do you like Dogfish Head Ale?  The beer style of Imperial Ale has gained popularity in recent years.  Our 90-minute version is probably the strongest beer you'll actually enjoy drinking, with more than twice the malt of a regular recipe! Think of this as the granddaddy of IPA; it's actually very similar to English Barleywine except for the fact that 90-minute uses American malt and hops.  And speaking of hops, this recipe contains more than any other in our collection!  Far stronger than your average IPA, full-bodied but decidedly non-sweet.  This beer's character is almost completely based on hop bitterness, flavor, and aroma.

Very full bodied and quite strong.  Russian Imperial Stout has less hop bitterness than British Imperial Stout. The aroma is predominantly malt and roasted malt instead of hops.  Russian Imperial Stout concentrates on the delicious flavors of caramel malt, roasted malt, and coffee-like roasted barley.  This beer is at its best after 8-12 weeks of bottle aging, and will continue to improve for months.  There are a lot of weak "Imperial Stout" recipe kits on the market, they come with 6 or 7 pounds of malt extract.  But we don't skimp on these - our Russian Imperial Stout recipe kit comes with 11 pounds of malt extract.

Item #72721
Irish Pub Ale Recipe Kit
Style: Irish Pub Ale   3.2% alcohol by wt. / 3.9% alcohol by vol.   color: Red

Do you like Smithwick's Irish Ale? We had a lot of requests for this beer style, and since it's a favorite around here, we spent extra time working on this before it was released. The secret to the style is to achieve full, creamy body without undue sweetness. Most homebrew "clone" recipes just don't get it right. With the use of unmalted barley and a host of other British ingredients, this is a lovely smooth beer with low carbonation and very moderate hop levels, the beauty is in the mouthfeel.

Item #71251a
Lambic (Cherry) Recipe Kit
Style: Belgian Kriek Lambic   5.0% alcohol by wt. / 6.2% alcohol by vol.   color: red-amber

This is truly a connoisseur's beer.  It has tons of fruit flavor and aroma, with a tart sourness that comes from the presence of lactic acid bacteria in the fermentation.  The recipe includes over 6 pounds of sterile, seedless cherries, which saves you lots of time compared to removing seeds and crushing the fruit yourself. There's also 4 ounces of cherry flavoring, pectic enzyme, Belgian candi (beet) sugar, and a special live yeast culture with three strains of wild lambic bacteria. If you have a kegging system (cornelius/soda kegs), you can sweeten the beer just before force carbonation, and the results will be in the style of Lindemans lambic beers. If you use natural bottle conditioning, which includes mini-kegs or party pigs, the result will be a dry tart flavor similar to Liefmans lambic beers.

This is the British version of "lite" beers. In England, these are often referred to as "session" beers because they're particularly suited to long public drinking sessions. Mild ale is relatively low in alcohol and body, but it still has plenty of flavor. The color is brown, with a nice blend of hop and malt flavors. You'll taste a hint of caramel malt and chocolate malt. This is a great beer for everyday drinking.

Item #71321a
Old Ale (British Strong Ale) Recipe Kit
Style: English-Style Old/Strong Ale   6.1% alcohol by wt. / 7.6% alcohol by vol.   color: brown

Old ale is probably the strongest beer style that doesn't need long aging in order to taste good.  That's because it's well-balanced to avoid harshness when young.  Like all strong beers, however, it does improve with age.  Thomas Nonsense! is very strong and medium-full bodied.  The color is deep copper to brown.  Malt characteristics are quite strong, and balanced by generous hop additions.  As it ages, these flavors "marry" meaning that they seem to blend and mellow each other.  Thomas Nonsense! contains not only British yeast strain, British hops, and British malt extract, but also two different British sugars.  The special sugars give Thomas Nonsense! the characteristic vinous (sherry or cognac-like) flavor of old ales.

Do you like Sierra Nevada Pale Ale?  We started designing this recipe to duplicate this famous microbrew.  This one came out a little stronger, but it was so good that we stuck with it.  Many customers who are big Sierra Nevada fans have reported that this recipe is even better - which is a great compliment!  This beer is not only one of our top 10 best-sellers, it's usually the top seller overall.  This award-winning recipe produces a medium-bodied American-style IPA with amber color and lots of hop character.  Ultimate Pale Ale includes 6 separate hop additions!  We use 8 pounds of quality malt extract, plus a blend of toasted malt and several crystal malts in this recipe, along with hops from Washington and Oregon.  Dave Miller (Author of "The Complete Handbook Of Homebrewing") judged this beer and called it "A very nice example of the style."

Do you like Bass Ale?  Rockfish Ale was designed for fans of this popular British import, but Rockfish ale is a little bolder, a little stronger.  Rockfish Ale is one of our top 10 best-selling recipes.  It's a "Very British" pale ale, containing 3 British grains, British malt extract, British yeast strain, and 3 different British hops.  The result is a medium-bodied, amber-colored beer with nice aroma and head retention.  Hops for this recipe come in 5 separate additions!  Fortunately, there's plenty of malt flavor and caramel sweetness to balance the hops.  We've heard quite a few reports that Rockfish Ale has been used to change the opinions of people who don't like "homebrew" or "bitter beers" or "dark beers."  That's probably because although Pale Ales are very different than the big commercial beers they're accustomed to, a well-designed Pale Ale should make almost anybody happy.

Recipes are available in 3 different formulas; (1) Malt Extract w/ Steeping Grains, (2) Partial Mash, or (3) All Grain.

Item #71351a
Pale Ale (Pepperpot) Recipe Kit
Style: English-Style Pale Ale   3.9% alcohol by wt. / 4.8% alcohol by vol.   color: amber

We're offering a second British Pale Ale - Pepperpot Pale ale - to satisfy popular demand.  Back in 1999 we had a promotional Pale Ale recipe kit that was such a huge success that our customers demanded more of them after the coupon ran out, so here it is!  Pepperpot Pale Ale has remained a best-seller.  Compared to Rockfish Ale, It features a little more caramel and toffee flavors, and cuts back a bit on hop flavor.  You'll enjoy the deep amber color, moderately full body, and clean flavor profile.  The "fruity" ester flavors (one person's wonderful fruity flavor is another person's dirty fermentation profile) which predominate so many microbrewed Pale Ales are very subdued in this recipe, due to the clean-tasting yeast strain used.  This is what makes the flavor of Pepperpot Ale so clean.  The effect is emphasized even more if you can ferment it at a slightly cooler temperature, in the range of 60-68 degrees, but normal room temperature also gives good results.

Item #71611a
Pennsylvania Porter Recipe Kit
Style: Historic American Porter   3.9% alcohol by wt. / 4.9% alcohol by vol.   color: brown

Do you like Yuengling Porter? We developed Pennsylvania Porter in response to the incredible rise in popularity of this historic microbrew. Pennsylvania Porter makes a medium-bodied porter with moderate hop and malt character.  This beer is milder than British-style porter. While this is a great beer all by itself, you can brew Pennsylvania Lager and Pennsylvania Porter to combine them in the glass for authentic Black & Tan. Real Black & Tan flavor is derived from the combination of a lager and an ale, so you must ferment two separate beers to get it right. You can also choose to combine the two beers at bottling time to create Black & Tan in each bottle.

Item #71401a
Porter (Brown Porter) Recipe Kit
Style: Brown Porter   3.7% alcohol by wt. / 4.6% alcohol by vol.   color: Dark Brown

Steel Mill Porter is our version of an ordinary porter.  These are moderate beers in body and flavor, with a deep reddish-brown color.  Porter does not have the full thick body that you would find in a stout.  Steel Mill Porter's sweet malt flavors are counterbalanced by roasted malt flavors.  The flavor and aroma of hops are also quite moderate and easy to enjoy.  All of the malt extract, grain, and hops used in this recipe are British imports.

Item #71531a
Porter (Honey) Recipe Kit
Style: Honey-Style Porter   4.2% alcohol by wt. / 5.3% alcohol by vol.   color: Brown

Woodbridge Porter is a modest brown porter which has benefited from the addition of honey.  The color is deep copper brown, the body is moderately full, and there is a wealth of honey-roasted malt aroma.  The malt aroma is reminiscent of roasted coffee thanks to the exclusive use of chocolate roasted malt for color.  The addition of honey yields complexity to an otherwise straightforward recipe, and also increases the alcohol content and mouth feel of the beer. Hop flavor and aroma are moderate to low.

Item #71411a
Porter (Robust ULTIMATE) Recipe Kit
Style: Robust Porter   4.5% alcohol by wt. / 5.6% alcohol by vol.   color: Black

Do you like Theakston's Old Peculier?  Ultimate Porter is our most popular porter recipe kit, based on a hard-to-find but fantastically good British porter with a funny name.  Ultimate Porter is one of out top 10 best-selling recipe kits.  The color is almost opaque black, like a stout, but Ultimate Porter doesn't have the full thick body of a stout.  The body is medium, and holding the glass up to light reveals beautiful red highlights in the deep black color. Compared to the ordinary porter, Ultimate Porter has more caramel, chocolate, and coffee-like roasted malt flavors. To make it Ultimate, we've added imported Demerara sugar and a highly-refined version of molasses called Black Treacle. This is a truly dark beer that has changed the minds of people who previously though that they didn't like dark beers, because it's strong and full of flavor but not heavy.

Item #71631a
Stout (Chocolate Stout) Recipe Kit
Style: Chocolate Stout   3.3% alcohol by wt. / 4.1% alcohol by vol.   color: Almost Black

Chocolate Stout is similar to classic Irish-style stout, except that Chocolate Stout is colored and flavored with chocolate malted barley instead of roasted non-malted barley.  The beer is very dark and full-bodied.  Chocolate malted barley is named for the color of the grain - it's dark brown when it comes out of the kiln.  The resulting flavor is something between chocolate and roasted coffee.  Instead of using cocoa powder (which just makes the beer an oily mess) we include a liquor-grade chocolate flavoring extract with this recipe, similar to the process used to make Young's Chocolate Stout.

Item #71451a
Stout (Cream Stout) Recipe Kit
Style: Cream/Sweet Stout   3.5% alcohol by wt. / 4.4% alcohol by vol.   color: Black

A full-bodied beer with deep reddish-black color.  Cream stout doesn't taste very sweet, but is sometimes referred to as "sweet stout" because it is significantly less bitter than Irish-style stouts.  The use of lactose (milk sugar) and maltodextrine in this recipe makes a very smooth beer.  Lower hop bitterness allows the complex flavors of malt, caramel, and roasted grains to dominate.

Item #71691
Strawberry Blond Recipe Kit
Style: Strawberry Blond   3.5% alcohol by wt. / 4.4% alcohol by vol.   color: Strawberry Blond!

Everyone loves this style, but we had a tough time replicating it. Real strawberries added to a blond ale were messy and lacked the "punch" to effect the flavor, and regular strawberry extracts tasted very fake, or they tasted like the wrong thing. Finally we found a great natural strawberry flavor that did the job, just remember to refrigerate it (along with the yeast) when it arrives. This is a golden-colored beer with a hint of pink, and the hops are present but toned-down to allow strawberries to shine through.

Item #71671
Summertime Lemon Ale Recipe Kit
Style: Lemon Blond Ale   3.5% alcohol by wt. / 4.4% alcohol by vol.   color: Golden
T

his is a very refreshing beer, with medium body and a moderate hopping level that compliments the fruit flavor rather than competing with it. After experimenting with real lemon juice (too acidic!) we settled on a great natural lemon extract that works perfectly with this style. Just remember to refrigerate the little bottle of lemon extract when you unpack your shipment. You'll add it at bottling/kegging time, but GO SLOWLY and test the taste, even the little bottle we send is probably too much if you just dump it all in!
