A copper-colored, medium-bodied, German-style ale with lots of malt flavor. "Altbier" means "Old Beer" in German. This name comes from the fact that it's fermented with an ale yeast; which lager-loving Germans consider old-fashioned. This beer has a clean, crisp taste, especially for an ale. Hop bitterness and aroma are moderate, with malt being the primary flavor. Recipe uses two types of imported German hops, combined with a German-style malt extract & German yeast strain. This gives much more authentic results than commonly-used British malt extract.

A beautiful looking amber ale. Medium body with plenty of malt characteristics including the flavor of caramel malt. Hop flavor and aroma are also apparent, but the beer is not extremely bitter. Three different types of hops are used to achieve a moderately assertive hop character, which balances the caramel malt's sweetness. The effect is both complex and satisfying. A good example of many beers from popular microbreweries.

This might be the biggest, strongest beer you'll ever brew! Deep copper color, with very full body and intense malt flavor. The maltiness is balanced with plenty of imported British hops. Belgian Dubbel Dark Trappist Ale

There is a lot of variation in Belgian and Belgian-style Trappist ales.  Our Belgian Dubbel recipe is brown in color, and moderate in alcohol strength. This recipe is all about malt - lots of malt flavor and aroma with a touch of cognac on the palate from the addition of imported Belgian candi sugar (beet sugar) and raw kosher honey. There is little or no hop bitterness, and no hop aroma. This beer is good to drink right away, but it also ages very nicely into a surprisingly mellow beverage.

Belgian Trippel Trappist Pale Ale

Style: Belgian Golden Trappist Ale

There's a lot of variation in the Trappist style ales.  Our Belgian Trippel is relatively pale in color, has a strong bread-like maltiness, and it's stronger in alcohol.  No lactic acid bacteria are during fermentation, so there is no acidic sourness in the flavor profile.  Made with continental European hops, a combination of German and Belgian barley malts and Belgian candi sugar (beet sugar.)  Trippel should be bottle aged for at least 3-6 weeks, but will continue to improve for many months.

Despite the name, this is not a bitter-tasting beer. The "ordinary" style is the everyday drinking beer in Great Britain. The word bitter actually refers to the use of hops; in the distant past before hops were commonly used, most beers were sweet. There are stronger, hoppier British ales, such as ESB (Extra Special Bitter) Pale Ale, and IPA (India Pale Ale.) But ordinary bitter is an easy beer to like. Its modest maltiness and modest bitterness, medium body and a lower carbonation level make for easy drinking. This recipe is made from imported British malt, hops, and grains.

ESB - Extra Special Bitter

Extra Special Bitter is a traditional English ale which is stronger than the Ordinary Bitter, but less strong than Pale Ale. You could consider E.S.B. to be the beer on which American microbreweries have based many of their Amber Ales.  E.S.B. is medium-full bodied, with a deep amber color and fantastic head retention. This beer has enough hops for nice aroma and flavor, but hop bitterness isn't as powerful as in Pale Ale or IPA. Imported British malt, hops, yeast and grains are used exclusively in this recipe.

Very full bodied and quite strong.  Russian Imperial Stout has less hop bitterness than British Imperial Stout.  Legend has it that this style was brewed incredibly strong to survive the cold Russian winter. Russian Imperial Stout's aroma is predominantly malt and roasted malt instead of hops, is concentrates on the delicious flavors of caramel malt, roasted malt, and coffee-like roasted barley.  This beer is at its best after 8-12 weeks of bottle aging, and will continue to improve for months.  There may be too many weak "Imperial Stout" kits on the market, with 6 or 7 pounds of malt extract, but we don't skimp on this one!  Our Russian Imperial Stout recipe kit comes with 11 pounds of malt extract and 2 pounds of specialty grains.

We're offering a second British Pale Ale, "Pepperpot Pale Ale," to satisfy popular demand.  Back in 1999 we had a promotional Pale Ale recipe kit that was such a huge success that our customers demanded more after the coupon ran out, so here it is!  Compared to Rockfish Ale, It features a little more caramel and toffee flavors, and cuts back a bit on the hops.  You'll enjoy the deep amber color, moderately full body, and clean flavor profile.  The "fruity" ester flavors (one person's wonderful fruity flavor is another person's dirty fermentation profile) which predominate so many microbrewed Pale Ales are very subdued in this recipe, due to the clean-tasting yeast strain used.  This is what makes the flavor of Pepperpot Ale so clean.  The effect is emphasized even more if you can ferment it at a slightly cooler temperature, in the range of 60-68 degrees, but normal room temperature also gives good results.

We developed our Pennsylvania Porter recipe in response to the incredible rise in popularity of this historic microbrew. Pennsylvania Porter makes a medium-bodied porter with moderate hop and malt character.  This beer is milder than British-style porter. Chocolate Stout is similar to classic Irish-style stout, except that the dark grains used in Chocolate Stout include chocolate malt in addition to the roasted barley that's used in Irish Stouts.  As you would expect from a stout, this beer is very dark and full-bodied.  Chocolate malted barley is named for the color of the grain - it's dark brown when it comes out of the kiln.  The resulting flavor is something between chocolate and roasted coffee.  Instead of using chocolate or cocoa powder, which just makes the beer an oily mess, we include a liquor-grade chocolate flavoring extract with this recipe.  This is similar to the process used to make Young's Chocolate Stout.

Oatmeal stout has an opaque black color and is very full bodied. In addition to raw barley, this beer owes its smooth texture to use of steel-rolled oats. This oatmeal also adds the characteristic flavor of the Oatmeal Stout to the roasted grain flavors and aromas of coffee, chocolate, and roasted malt.  Bitterness from hops and roasted grains is moderate, and are secondary to the malt character of the beer.

Strawberry Blond

Everyone loves this style, but we had a tough time replicating it. Real strawberries added to blond ale were messy and lacked enough "punch" to effect the flavor, and regular strawberry extracts tasted very fake - or they tasted like the wrong thing. Finally we found a great natural strawberry extract that did the job, just remember to refrigerate it (along with the yeast) when it arrives. This is a golden-colored beer with a hint of pink, and the hops are present but toned-down to allow strawberries to shine through.

Our "Ice Melter" recipe makes a strong dark ale which is quite full-bodied and rich in flavor.  Alcohol content is high enough to achieve that "warming" feeling!  The recipe includes a special blend of 11 pounds of malt extracts, combined with three generous additions of American hops.  Noble-type hops are used for flavor and aroma.
