A brisk, refreshing lager. Golden color, with more flavor and body than the American-style pilsner beers. The malt extract we use is designed to give the beer a beautiful pale golden color, and hops from Australia and New Zealand give their characteristic flavor and aroma. Bock - Traditional German Dark Bock

Style: German-style Traditional Bock

A strong, full-flavored lager beer. Bock beer has big malty taste, deep copper color, and medium-full body. The flavors of malt and caramel dominate the moderate amount of hops used. There is no hop aroma. With 9.5 pounds of malt extract, we don't skimp on ingredients for our bock kits! (There are a lot of weak bock kits on the market.) This lager ferments well at any steady temperature between 48-65 degrees, but thanks to the "Tuborg" yeast strain we use, you also get good results at room temperature. Bocks fermented at room temperature will benefit from some extra bottle aging time.  Bock, like other strong lagers, benefits from cold aging. You should store the bottles at room temperature for at least 2-3 weeks while carbonation develops, then move the bottles to a cool place or into a refrigerator if you have space.

Bock - German Helles Bock / Maibock

Style: German-style Maibock or Helles Bock

This is the strongest light-colored German beer style. Intense gold color with very crisp and clean flavor. Maibock is less sweet and a bit lighter-bodied than the darker traditional bock beers. Maibock also has a bit more hops, but the dominant flavor is still that of malt. With more than 9 pounds of malt extract, we don't skimp on ingredients for our bock kits! Bock - German Doppelbock

Style: German-style Doppelbock
ABV: 7.7%
Color: Copper Brown

This is a very strong, full-bodied lager beer. Doppelbock is the strongest of all German-style beers. Roasted malts contribute color to this beer, but the flavor is that of milder, sweeter malts. Alcohol content is quite high, and hop bitterness is just sufficient to prevent the malt sweetness from being cloying. However, hop bitterness is perceived as being low, while hop flavor and aroma are barely present.  With 11 pounds of malt extract, we don't skimp on ingredients for this one! (There are a lot of weak doppelbock kits on the market.) This is a very strong beer so the flavor will improve a lot with age, especially for the first 6 months. Store the bottles at room temperature for at least 2-3 weeks while carbonation develops, then move them to a cool location if you have one available.

Bock - Weizenbock

Style: German-style Weizenbock or Wheat Bock
ABV: 6.8%
Color: Amber

Weizenbock is another strong German beer.  But unlike the other bock styles, it's based on wheat malt and uses an ale-based Bavarian wheat beer yeast instead of a lager yeast. This is the powerhouse of all German wheat beers!  It's very full-bodied and rich compared to other wheat beers, and while the hop level is modest, it's definitely part of the flavor profile.

This is our recipe for the same beer style. We can't call it "steam beer" because Anchor Brewing Company has copyrighted the word, so the style is now called "California Common."  This is a special type of lager which is meant to be fermented at warmer temperatures. Although other lagers can be warm fermented, this one must be.  Temperatures between 65 and 72 degrees are ideal.  This beer has a brilliant amber color, medium-body, with nice full hop flavor and aroma throughout.

This recipe kit has become extremely popular since we introduced it in 2000. The color of our Honey Brown really is light brown - unlike some commercial versions. The body is moderately light with more than a touch of honey character. Rice syrup is added to the malt extract for crisp flavor, and to prevent the beer from becoming too heavy-bodied. Special brown roasted malt is used for color and toasted malt aroma. This allows us to avoid heavy caramel sweetness by lightening the load of crystal malt. The flavor and aroma of hops is quite modest.

A very unique German beer style. This is a light-colored ale with medium body. The yeast used to make Kolsch gives the beer a characteristic dry, almost wine-like flavor. This recipe was an instant hit, and has remained one of our best sellers. It has a light golden color, and a flavor that's lively and refreshing on the palate. The body is light and delicate, making this a very easy-drinking beer. The strain of lager yeast used in this beer is tolerant of a wide range of temperatures, so even room temperature will give good results.  If you ferment the beer at room temperature, the flavor will smooth out if you can refrigerate your bottles for a week or two after giving them a chance to carbonate.  The "Cervesa" style is actually a new-world version of classic German beer. This is a great recipe to brew for your friends who aren't interested in exotic beer styles, but everyone can enjoy our "North Of The Border" Cervesa. You supply the limes!

Steinful ferments well at a wide range of temperatures, a steady temperature between 58 and 72 degrees will give good results. Beers fermented at the warmer end of the temperature range will benefit from bottle aging, especially if you can refrigerate the bottles for a week or two after they've had a chance to develop carbonation.

We developed our Pennsylvania Lager recipe kit in response to the incredible rise in popularity of this historic microbrew.  This style has more color and flavor than the beers from the American megabreweries, yet it has been a big hit with almost all groups of beer drinkers.  We use a special combination of barley malt extract, invert sugar, and premium American hops to make this recipe.  While this is a great beer all by itself, you can brew Pennsylvania Lager and Pennsylvania Porter to combine them in the glass for authentic Black & Tan.  Real Black & Tan flavor is derived from the combination of a lager and an ale, so you must ferment two separate beers to get it right.  You can also choose to combine the two beers at bottling time to create Black & Tan in each bottle.

This is one of the classic German beer styles.  Bavarian Pilsner has medium-light body and deep golden color.  The malt flavors are clean and crisp, with very little sweetness.  German hops are used exclusively in this recipe.  Hop flavor and aroma are considerably lower than in the Czech-style pilsner.  There is a definite clean hop bitterness which is a bit stronger than Oktoberfest, and much stronger than American-style Pilsner.

Pilsner - Czech Style

Do you like Pilsner Urquell or Budvar?

This is our version of the style that originated the Pilsner name.  Czech pilsner is a moderately-light bodied beer with golden color.  Imported hops from the Czech Republic and Germany are used for flavor and aroma.  Our "Home Brewdvar" recipe uses a large amount of relatively low-power hops to achieve its highly-hopped flavor, so it's rich in secondary hop characteristics instead of just plain bitterness.  This recipe ferments well at a wide range of fermentation temperatures, thanks to the authentic Czech strain of "Tuborg" pilsner yeast we use.  Good results can be achieved at temperatures between 50 and 74 degrees, so a good comfortable room or basement is all you need.  Czech Pilsner that's warm-fermented will mellow out a lot if you give the bottles some cold lagering time in the refrigerator after they've had a chance to carbonate.
