Item #71051a
American Pilsner
Style: American Megabrewery Pilsener
ABV: 4.4%
Color: Golden

Do you like beer from the big American breweries?

Pale color, light body, and little hop presence. We use a special combination of malt extracts - made from malted barley and rice.  This recipe doesn't have any nasty off-flavors, because we don't use cheap corn syrup or glucose!  The trick to this style is developing a recipe that is light in color and body, without heaviness of flavor or body while avoiding blandness.  This lager ferments well at a wide range of fermentation temperatures, thanks to the special Tuborg family yeast strain. Good results can be achieved at temperatures between 50 and 74 degrees, so a good comfortable room or basement is all you need.

Item #71111a
Blond Ale

Style: American Blond Ale
ABV: 4.2%
Color: Golden

This new style is a variation on the "Pale Ale" theme, made popular by microbreweries and brewpubs. The body and color are lighter than British pale ales, which tend towards full body and amber color.  Blond ale's hop bitterness is reduced, but it still has the generous hop flavor and aroma of an IPA. This beer is easy to drink; Blond Ale has been quite popular since we introduced it in 1999. A great hot weather beer, or for any time you want a lighter beer which has interesting flavor and aroma.

Item #71421a
Blueberry Wheat

Style: Fruit-style Wheat Beer
ABV: 6.1%
Color: Blueberry Tinted Golden

It takes a lot of ingredients to make a fruit-style wheat beer right, but the results are worth it!  After all, you can't expect much if you just throw some blueberry flavoring into a plain wheat beer. Our blueberry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless blueberry puree. The puree is seedless and sterile, which means you don't have to spend time removing tiny seeds and crushing fruit. The natural fruit sugar in the pureed blueberry has the bonus side effect of boosting the alcohol content! To round out the fruit profile, the recipe also includes 4 ounces of natural blueberry flavoring. At bottling time, add the blueberry flavoring until the beer is perfect for your taste.  Also included with this recipe is a packet of pectic enzyme, which is necessary to remove the haze caused by real fruit.

Brown Ale - English

Style: English Brown Ale
ABV: 5.1%
Color: Brown

Do you like Newcastle Brown Ale™?

Always one of our most popular recipes. Our version of the famous British ale has the same beautiful reddish-brown color. The beer is medium-bodied but rich in malt flavor. This recipe is made with 5 different British grains, plus British malt extract, British hops, and raw Demerara sugar for authenticity. This recipe's popularity comes from the satisfying blend of toasted-malt, caramel, and toffee flavors. Hops are present as a balancing influence without any aggressive bitterness or strong hop flavors.

Item #71701
Imperial Ale - 60 Minute

Style: American Imperial Pale Ale
ABV: 6.0%
Color: Golden

Do you like Dogfish Head 60-Minute IPA™?

The Imperial Pale Ale style has gained popularity in recent years.  Rocketing straight to our top-ten most popular recipes in less than a year, this one is guaranteed to make all hop-heads smile.  A little stronger than your average IPA, and with more hops than a normal IPA would contain.  Additionally, there is less non-fermentable sugar in the beer because crystal malt's presence is quite low.  The result is a medium-full bodied beer wit aggressive hop bitterness, rich hop flavor, and powerful hop aroma.

Item #71291a
Mexican Cervesa

Style: Cervesa
ABV: 4.5%
Color: Golden

Do you like Corona or Dos Equis?

This recipe was an instant hit, and has remained one of our best sellers. It has a light golden color, and a flavor that's lively and refreshing on the palate. The body is light and delicate, making this a very easy-drinking beer. The strain of lager yeast used in this beer is tolerant of a wide range of temperatures, so even room temperature will give good results.  If you ferment the beer at room temperature, the flavor will smooth out if you can refrigerate your bottles for a week or two after giving them a chance to carbonate.  The "Cervesa" style is actually a new-world version of classic German beer. This is a great recipe to brew for your friends who aren't interested in exotic beer styles, but everyone can enjoy our "North Of The Border" Cervesa. You supply the limes!

Item #71281a
Oktoberfest

Style: German Oktoberfest
ABV: 5.0%
Color: Amber

Our "Steinful" recipe kit is an Oktoberfest in the more modern tradition of the style. That means it's designed to be crisp, clean, and golden-amber colored rather than dark and bitter. This is by far our most popular German-style recipe kit - it enjoys top-ten recipe status all year long. Oktoberfest has less hop bitterness than traditional German beers like Bavarian pilsner and Bohemian pilsner. The flavor is that of malt with a slight sweetness. Steinful ferments well at a wide range of temperatures, a steady temperature between 58 and 72 degrees will give good results. Beers fermented at the warmer end of the temperature range will benefit from bottle aging, especially if you can refrigerate the bottles for a week or two after they've had a chance to develop carbonation.

Item #71331a
Pale Ale - Ultimate Series

Style: American IPA
ABV: 5.9%
Color: Amber

Do you like Sierra Nevada Pale Ale?

We started designing this recipe to duplicate this famous microbrew.  In the end, our Ultimate IPA came out a little stronger, but it was so good that we stuck with it.  Many customers who are big Sierra Nevada fans have reported that this recipe is even better, which is a great compliment!  This beer is not only one of our top 10 best-sellers, it's often the top seller.  This award-winning recipe produces a medium-bodied American-style IPA with amber color and lots of hop character.  Ultimate Pale Ale includes 6 separate hop additions!  We use 8 pounds of quality malt extract, plus a blend of toasted malt and several crystal malts in this recipe, along with hops from Washington and Oregon.  Dave Miller (author of "The Complete Handbook Of Homebrewing") once judged this beer and called it "A very nice example of the style."

Item #71341a
Pale Ale - British Style "Rockfish Ale"

"Style: English Pale Ale
ABV: 5.5%
Color: Amber

Do you like Bass Ale™?

Our "Rockfish Ale" was designed for fans of this popular British import, but Rockfish is a little bolder, a little stronger.  One of our top 10 best-selling recipes.  It's a very British pale ale, containing 3 British grains, British malt extract, British yeast strain, and 3 different British hops.  The result is a medium-bodied, amber-colored beer with nice aroma and head retention.  Hops for this recipe come in 5 separate additions!  Fortunately, there's plenty of malt flavor and caramel sweetness to balance the hops.  We've heard quite a few reports that Rockfish Ale has been used to change the opinions of people who don't like "homebrew" or "bitter beers" or "dark beers."  That's probably because although Pale Ales are very different than the big commercial beers they're accustomed to, a well-designed Pale Ale should make almost anybody happy.

Item #71591a
Pennsylvania Lager

Style: Classic American Lager
ABV: 4.6%
Color: Amber

Do you like Yuengling Lager?

We developed our Pennsylvania Lager recipe kit in response to the incredible rise in popularity of this historic microbrew.  This style has more color and flavor than the beers from the American megabreweries, yet it has been a big hit with almost all groups of beer drinkers.  We use a special combination of barley malt extract, invert sugar, and premium American hops to make this recipe.  While this is a great beer all by itself, you can brew Pennsylvania Lager and Pennsylvania Porter to combine them in the glass for authentic Black & Tan.  Real Black & Tan flavor is derived from the combination of a lager and an ale, so you must ferment two separate beers to get it right.  You can also choose to combine the two beers at bottling time to create Black & Tan in each bottle.

Item #71371a
Pilsner - Czech Style

Style: Czech-Style Pilsener
ABV: 4.9%
Color: Golden

Do you like Pilsner Urquell or Budvar?

This is our version of the style that originated the Pilsner name.  Czech pilsner is a moderately-light bodied beer with golden color.  Imported hops from the Czech Republic and Germany are used for flavor and aroma.  Our "Home Brewdvar" recipe uses a large amount of relatively low-power hops to achieve its highly-hopped flavor, so it's rich in secondary hop characteristics instead of just plain bitterness.  This recipe ferments well at a wide range of fermentation temperatures, thanks to the authentic Czech strain of "Tuborg" pilsner yeast we use.  Good results can be achieved at temperatures between 50 and 74 degrees, so a good comfortable room or basement is all you need.  Czech Pilsner that's warm-fermented will mellow out a lot if you give the bottles some cold lagering time in the refrigerator after they've had a chance to carbonate.

Item #71411a
Porter - Ultimate Series Robust Porter

Style: Robust  Porter
ABV: 6.1%
Color: Black

Do you like Theakston's Old Peculier™?
Ultimate Porter is our most popular porter recipe kit, based on a hard-to-find but fantastically good British porter with a funny name.  Ultimate Porter is one of out top 10 best-selling recipe kits.  The color is almost opaque black, like a stout, but Ultimate Porter doesn't have the full thick body of a stout.  The body is medium, and holding the glass up to light reveals beautiful red highlights in the deep black color. Compared to the ordinary porter, Ultimate Porter has more caramel, chocolate, and coffee-like roasted malt flavors. To make it Ultimate, we've added imported Demerara sugar and a highly-refined version of molasses called Black Treacle. This is a truly dark beer that has changed the minds of people who previously though that they didn't like dark beers, because it's strong and full of flavor but not heavy.

Style: Irish-Style Stout
ABV: 4.6%
Color: Ruby Black

Do you like Irish Stouts like Guinness™ or Beamish™?

The beer is full-bodied with an almost opaque black color which will show red highlights in strong light.  The flavor and aroma of roasted malts are combined with clean hop bitterness, with no hop flavor or aroma.  The low carbonation level allows it to develop a dense head of foam.  We add a generous portion of raw barley for body and mouthfeel.

Item #71551a
Stout - Oatmeal Stout

Style: Oatmeal Stout
ABV: 4.6%
Color: Ruby Black

Oatmeal stout has an opaque black color and is very full bodied. In addition to raw barley, this beer owes its smooth texture to use of steel-rolled oats. This oatmeal also adds the characteristic flavor of the Oatmeal Stout to the roasted grain flavors and aromas of coffee, chocolate, and roasted malt.  Bitterness from hops and roasted grains is moderate, and are secondary to the malt character of the beer.

Item #71471a
Wheat Beer - German Wheat or Hefeweizen

Style: German Wheat beer
ABV: 5.0%
Color: Golden

German wheat beer is light and crisp, and has less hop character than American wheat beer.  The predominant flavor of German wheat beers comes from the use  of special yeast, which produces fruity-esters to a greater or lesser degree. These fruity esters can make the beer taste like someone spiced it with banana, clove, and nutmeg - but these flavors all derive from the yeast, no fruit or spice is used.  Higher fermentation temperatures of 75-80 degrees will increase ester production in almost any yeast, while lower temperatures 65-70 degrees will minimize ester production.

Item #71561a
Wit Beer - Belgian Witbier

Style: Belgian-Style Wit
ABV: 4.9%
Color: Golden

Wit beer is a very pale beer that's served cloudy.  This recipe has a moderately light body and a low level of flavor and aroma hops.  It's a light and delicate wheat beer made with a special yeast culture that produces flavors which are tart and slightly phenolic. This recipe is also spiced with coriander and curacao orange peel in addition to noble hops. Witbier is different from other wheat beers not only because of the spices, but also due to the use of raw, unmalted wheat.
