Belgian Trippel Pale Trappist Ale Recipe Kit

Bock (German Helles/Maibock) Recipe Kit

This is the strongest light-colored German beer style. Intense gold color with very crisp and clean flavor. Maibock is less sweet and a bit lighter-bodied than the darker traditional bock beers. Maibock also has a bit more hops, but the dominant flavor is still that of malt. With more than 9 pounds of malt extract, we don't skimp on ingredients for our bock kits! Everyone loves this style, but we had a tough time replicating it. Real strawberries added to a blond ale were messy and lacked the "punch" to effect the flavor, and regular strawberry extracts tasted very fake, or they tasted like the wrong thing. Finally we found a great natural strawberry flavor that did the job, just remember to refrigerate it (along with the yeast) when it arrives. This is a golden-colored beer with a hint of pink, and the hops are present but toned-down to allow strawberries to shine through.

After experimenting with real lemon juice (too acidic!) we settled on a great natural lemon extract that works perfectly with this style. Just remember to refrigerate the little bottle of lemon extract when you unpack your shipment. You'll add it at bottling/kegging time, but GO SLOWLY and test the taste, even the little bottle we send is probably too much if you just dump it all in!

This recipe is a light, crisp, refreshing beer.  American wheat beers are fermented with yeast strains which produces little or no fruity-ester flavors.  Fruity-esters are spicy, fruity banana-like flavors which more dominant in German-style wheat beers.  American-style wheat beer has a more "clean" flavor, because it is low in esters.  The color is a beautiful gold, because we use American instead of British wheat malt extract.  British wheat malt extract, while it can be good, is usually darker and lower in actual wheat content.

German wheat beer has less hop flavor than American wheat beer.  The predominant flavor of German wheat beers comes from the use  of special yeast, which produces a lot of fruity-estery flavors.  These esters can make the beer taste like someone spiced it with banana, clove, and nutmeg.  But these flavors all derive from the yeast, there is no fruit or spice used.  Higher fermentation temperatures of 75-80 degrees will increase ester production.

We offer this recipe with your choice of three different yeasts.  Choose below to select a slightly estery Bavarian yeast strain, a moderately estery German strain, or a highly esterey "Hefeweizen" strain.  The hefeweizen yeast tends to stay suspended in the beer, producing the typical cloudiness of the style.
