Belgian Trippel Trappist Pale Ale

Style: Belgian Golden Trappist Ale
ABV: 7.9%

There's a lot of variation in the Trappist style ales.  Our Belgian Trippel is relatively pale in color, has a strong bread-like maltiness, and it's stronger in alcohol.  No lactic acid bacteria are during fermentation, so there is no acidic sourness in the flavor profile.  Made with continental European hops, a combination of German and Belgian barley malts and Belgian candi sugar (beet sugar.)  Trippel should be bottle aged for at least 3-6 weeks, but will continue to improve for many months.

It takes a lot of ingredients to make a fruit-style wheat beer right, but the results are worth it!  After all, you can't expect much if you just throw some blackberry flavoring into a plain wheat beer. Our blackberry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless blackberry puree. The puree is seedless and sterile, which means you don't have to spend time removing tiny seeds and crushing fruit. The natural fruit sugar in the pureed blackberry has the bonus side effect of boosting the alcohol content! To round out the fruit profile, the recipe also includes 4 ounces of natural blackberry flavoring. At bottling time, add the blackberry flavoring until the beer is perfect for your taste.  Also included with this recipe is a packet of pectic enzyme, which is necessary to remove the haze caused by real fruit.

This new style is a variation on the "Pale Ale" theme, made popular by microbreweries and brewpubs. The body and color are lighter than British pale ales, which tend towards full body and amber color.  Blond ale's hop bitterness is reduced, but it still has the generous hop flavor and aroma of an IPA. This beer is easy to drink; Blond Ale has been quite popular since we introduced it in 1999. A great hot weather beer, or for any time you want a lighter beer which has interesting flavor and aroma.

Bock - German Helles Bock / Maibock

Style: German-style Maibock or Helles Bock
ABV: 6.8%
Color: Deep Golden

This is the strongest light-colored German beer style. Intense gold color with very crisp and clean flavor. Maibock is less sweet and a bit lighter-bodied than the darker traditional bock beers. Maibock also has a bit more hops, but the dominant flavor is still that of malt. With more than 9 pounds of malt extract, we don't skimp on ingredients for our bock kits! (There are a lot of weak bock kits on the market.) This lager ferments well at any steady temperature between 48-65 degrees, but thanks to the "Tuborg" yeast strain we use, you also get good results at room temperature. Bocks fermented at room temperature will benefit from some extra bottle aging time. Bock, like other strong lagers, benefits from cold aging. You should store the bottles at room temperature for at least 2-3 weeks while carbonation develops, then move the bottles to a cool place or into a refrigerator if you have space.

A very unique German beer style. This is a light-colored ale with medium body. The yeast used to make Kolsch gives the beer a characteristic dry, almost wine-like flavor. Although this is a special hybrid ale/lager yeast strain, it does not require any special care.  You can treat it just like a normal ale fermentation. The results will speak for itself. This recipe was an instant hit, and has remained one of our best sellers. It has a light golden color, and a flavor that's lively and refreshing on the palate. The body is light and delicate, making this a very easy-drinking beer. The strain of lager yeast used in this beer is tolerant of a wide range of temperatures, so even room temperature will give good results.  If you ferment the beer at room temperature, the flavor will smooth out if you can refrigerate your bottles for a week or two after giving them a chance to carbonate.  The "Cervesa" style is actually a new-world version of classic German beer. This is a great recipe to brew for your friends who aren't interested in exotic beer styles, but everyone can enjoy our "North Of The Border" Cervesa. You supply the limes!

Style: German Bavarian-Style Pilsener

This is one of the classic German beer styles.  Bavarian Pilsner has medium-light body and deep golden color.  The malt flavors are clean and crisp, with very little sweetness.  German hops are used exclusively in this recipe.  Hop flavor and aroma are considerably lower than in the Czech-style pilsner.  There is a definite clean hop bitterness which is a bit stronger than Oktoberfest, and much stronger than American-style Pilsner.

Pilsner - Czech Style

Do you like Pilsner Urquell or Budvar?

This is our version of the style that originated the Pilsner name.  Czech pilsner is a moderately-light bodied beer with golden color.  Imported hops from the Czech Republic and Germany are used for flavor and aroma.  Our "Home Brewdvar" recipe uses a large amount of relatively low-power hops to achieve its highly-hopped flavor, so it's rich in secondary hop characteristics instead of just plain bitterness.  This recipe ferments well at a wide range of fermentation temperatures, thanks to the authentic Czech strain of "Tuborg" pilsner yeast we use.  Good results can be achieved at temperatures between 50 and 74 degrees, so a good comfortable room or basement is all you need.  Czech Pilsner that's warm-fermented will mellow out a lot if you give the bottles some cold lagering time in the refrigerator after they've had a chance to carbonate.

It takes a lot of ingredients to make a fruit-style wheat beer right, but the results are worth it!  After all, you can't expect much if you just throw some raspberry flavoring into a plain wheat beer. Our raspberry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless raspberry puree. The puree is seedless and sterile, which means you don't have to spend time removing tiny seeds and crushing fruit. The natural fruit sugar in the pureed raspberry has the bonus side effect of boosting the alcohol content! To round out the fruit profile, the recipe also includes 4 ounces of natural raspberry flavoring. At bottling time, add the raspberry flavoring until the beer is perfect for your taste.  Also included with this recipe is a packet of pectic enzyme, which is necessary to remove the haze caused by real fruit.

Strawberry Blond

Everyone loves this style, but we had a tough time replicating it. Real strawberries added to blond ale were messy and lacked enough "punch" to effect the flavor, and regular strawberry extracts tasted very fake - or they tasted like the wrong thing. Finally we found a great natural strawberry extract that did the job, just remember to refrigerate it (along with the yeast) when it arrives. This is a golden-colored beer with a hint of pink, and the hops are present but toned-down to allow strawberries to shine through.

American wheat beer has a light, crisp, refreshing flavor.  They're fermented with yeast strains which produces little or no fruity-ester flavors, giving them a "cleaner" flavor compared to most German or Belgian wheat beers. We use American wheat malt extract instead of a British extract - British extracts are a bit cheaper but usually darker and lower in wheat content. German wheat beer is light and crisp, and has less hop character than American wheat beer.  The predominant flavor of German wheat beers comes from the use  of special yeast, which produces fruity-esters to a greater or lesser degree. These fruity esters can make the beer taste like someone spiced it with banana, clove, and nutmeg - but these flavors all derive from the yeast, no fruit or spice is used.  Higher fermentation temperatures of 75-80 degrees will increase ester production in almost any yeast, while lower temperatures 65-70 degrees will minimize ester production.
