Item #71001a
Altbier Recipe Kit
Style: German-style Altbier   3.6% alcohol by wt. / 4.5% alcohol by vol.   color: copper

A copper-colored, medium-bodied, German-style ale with lots of malt flavor. "Altbier" means "Old Beer" in German. This name comes from the fact that it's fermented with an ale yeast; which lager-loving Germans consider old-fashioned. This beer has a clean, crisp taste, especially for an ale. Hop bitterness and aroma are moderate, with malt being the primary flavor. Recipe uses two types of imported German hops, combined with a German-style malt extract & German yeast strain. This gives much more authentic results than commonly-used British malt extract.

Recipes are available in 3 different formulas; (1) Malt Extract w/ Steeping Grains, (2) Partial Mash, or (3) All Grain.

Item #71011a
Amber Ale Recipe Kit
Style: American-style Amber Ale   3.6% alcohol by wt. / 4.5% alcohol by vol.   color: amber

A beautiful looking amber-colored ale. Medium body with plenty of malt characteristics including the flavor of caramel malt. Hop flavor and aroma are also apparent, but the beer is not extremely bitter. Three different types of hops are used to achieve a moderate level of bitterness, which balances the caramel malt's sweetness. The effect is both complex and satisfying. A good example of many beers from popular microbreweries.

Amber Ale (ULTIMATE) Recipe Kit
Style: American-style Amber Ale   4.3% alcohol by wt. / 5.4% alcohol by vol.   color: amber

This recipe kit is one of our top ten best-sellers, with an inviting red-amber color with a rich white head. This recipe is a little stronger in every way than our regular amber ale recipe kit.  Like all of our "ULTIMATE" recipes, this one pushes the upper boundaries of the style. This beer is very popular with any group of beer drinkers. A medium-bodied beer with assertive hop characteristics and plenty of malt and caramel malt flavor.  This recipe uses a combination of British and American hops for flavor and aroma. Alcohol content is boosted, too.

Item #71081a
Barleywine Recipe Kit
Style: English-style Barleywine   7.3% alcohol by wt. / 9.1% alcohol by vol.   color: copper

This is the biggest, strongest beer you'll ever brew! Deep copper color, with very full body and intense malt flavor. The maltiness is balanced with plenty of imported British hops. This recipe comes with 14 pounds of imported British malt extract and 7 ounces of hops! A beer this strong may taste a bit rough when it's young, but it's fantastic after some bottle aging time. We suggest aging this beer in bottles at room or basement temperature for at least 4-6 months for best flavor. It will continue to improve for over 2 years!

Item #71681
Belgian Quad Recipe Kit
Style: Belgian Trappist Ale   7.4% alcohol by wt. / 9.2% alcohol by vol.   color: Copper

This is the strongest of the Trappist-style ales.  This is a beer that will hold up to many years of aging, and will definitely improve during its first year in the bottle.  Those choosing to keg this beer should set their system for a moderately low carbonation level, since the head-retention character of this beer is phenomenal!  With twice as much malt as a normal-strength beer, this is an extremely full-bodied, malty beer with just a touch of classic European hops.

Item #71101a
Bitter (British Ordinary) Recipe Kit
Style: English-Style Ordinary Bitter   3.3% alcohol by wt. / 4.1% alcohol by vol.   color: amber

Despite the name, this is not a bitter-tasting beer. The "ordinary" style is the everyday drinking beer in Great Britain. The word bitter actually refers to the use of hops; in the distant past before hops were commonly used, most beers were sweet. There are stronger, hoppier British ales, such as ESB (Extra Special Bitter) Pale Ale, and IPA (India Pale Ale.) But ordinary bitter is an easy beer to like. Its modest maltiness and modest bitterness, medium body and a lower carbonation level make for easy drinking. This recipe is made from imported British malt, hops, and grains.

Item #71751
Bock (Weizenbock) Recipe Kit
Style: Weizenbock   5.3% alcohol by wt. / 6.6% alcohol by vol.   color: Amber

Weizenbock is another strong German beer, but unlike the other bock styles, it's based on wheat malt and uses an ale-based Bavarian wheat beer yeast instead of a lager yeast. It's very full-bodied and rich compared to other wheat beers, and while the hop level is modest, it's definitely part of the flavor profile.

Do you like Samuel Adam's Boston Ale? This recipe kit is our version of the most famous microbrewed ale in America. Boston Ale is stylistically similar to a British pale ale, but it uses lots of noble German hops added for flavor and aroma. The flavor of hops is complimented by medium-bodied maltiness with a touch of caramel sweetness in the finish.

Item #71161a
California Common Beer Recipe Kit
Style: California Common Beer   3.6% alcohol by wt. / 4.5% alcohol by vol.   color: amber

Do you like Anchor Steam? This is our recipe for the same beer style. We can't call it "steam beer" because Anchor Brewing Company has copyrighted the word "Steam," so the style is now called "California Common."  This is a special type of lager which is meant to be fermented at warmer temperatures. Although other lagers can be warm fermented, this one must be.  Temperatures between 65 and 72 degrees are ideal.  This beer has a brilliant amber color, medium-body, with nice full hop flavor and aroma throughout.

Item #71171a
California Common (ULTIMATE) Recipe Kit
Style: California Common Beer   4.3% alcohol by wt. / 5.4% alcohol by vol.   color: amber

Do you like Anchor Steam? This recipe is in the same style, except this ULTIMATE version is stronger. We can't call it "steam beer" because Anchor Brewing Company has copyrighted the word "Steam," so now the beer style is officially "California Common." This is a special type of lager which is meant to be fermented at warmer temperatures. Although other lagers can be warm fermented, this one must be.  Fermentation temperatures of 65 to 72 degrees are ideal.  This Ultimate version has more of everything - more malt extract for greater body & higher alcohol content, and more hops. The result is a remarkably balanced beer that's strong and hearty without going over the top.

Item #71181a
Cherry Wheat Recipe Kit
Style: Fruit-Style Wheat Beer   5.0% alcohol by wt. / 6.2% alcohol by vol.   color: golden red

It takes a lot of ingredients to make a fruit-style wheat beer right, but the results are worth it!  After all, you can't expect much if you just throw some cherry flavoring into a plain wheat beer. Our cherry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless cherry puree. The puree (made from a blend of sour cherries and dark sweet cherries) is seedless and sterile, which means you don't have to spend time removing seeds and crushing fruit. The natural fruit sugar in the pureed cherries has the bonus side effect of boosting the alcohol content! To round out the fruit profile, the recipe also includes 4 ounces of natural cherry flavoring. At bottling time, add the cherry flavoring until the beer is perfect for your taste.  Also included with this recipe is a packet of pectic enzyme, which is necessary to remove the haze caused by real fruit.

Item #71201a
E.S.B. Recipe Kit
Style: English Strong Bitter   3.9% alcohol by wt. / 4.9% alcohol by vol.   color: amber

Extra Special Bitter is a traditional English ale which is stronger than the Ordinary Bitter, but less strong than Pale Ale. You could consider E.S.B. to be the beer on which American microbreweries have based many of their Amber Ales.  E.S.B. is medium-full bodied, with a deep amber color and fantastic head retention. This beer has enough hops for nice aroma and flavor, but hop bitterness isn't as powerful as in Pale Ale or IPA. Imported British malt, hops, yeast and grains are used exclusively in this recipe.

Item #71211a
Honey Brown Recipe Kit
Style: American Honey Lager   3.3% alcohol by wt. / 4.2% alcohol by vol.   color: light brown

This recipe kit has become extremely popular since we introduced it in 2000. The color of our Honey Brown really is light brown - unlike some commercial versions! The body is moderately light with a touch of honey. Rice syrup is added to the malt extract for crisp flavor and to keep the beer from becoming too heavy. Special brown roasted malt is used for color and toasted malt aroma. This allows us to avoid heavy caramel sweetness by lightening the load of crystal malt. The flavor and aroma of hops is quite modest.

Item #71041a
Hopfest Brown Ale Recipe Kit
Style: Microbrewery-Style Hopfest   4.9% alcohol by wt. / 6.1% alcohol by vol.   color: brown

Do you like Pete's Wicked Ale? This is our version of a famous microbrew. Assateague's Awesome Ale is a little bit hard to categorize: think of it as either a "Dark IPA" or a "Strong Brown Ale." The beer is brown in color, but has the high hop flavor and aroma of a pale ale or IPA. The crisp hop bitterness is derived from generous portions of Northwestern US hops. There's also plenty of malt for body and strength, and a blend of specialty grains for color and aroma.

Item #71701
Imperial Ale 60-Minute Recipe Kit
Style: Imperial (Pale) Ale   5.0% alcohol by wt. / 6.2% alcohol by vol.   color: Amber
Do you like Dogfish Head Ale?  The beer style of Imperial Ale has gained popularity in recent years.  This one is a little stronger than your average IPA, and uses more hops than a normal IPA would.  Additionally, there is less non-fermentable sugar in the beer because crystal malt's presence is quite low.  The result is a medium-full bodied beer wit aggressive hop bitterness, rich hop flavor, and powerful hop aroma.

Imperial Ale 90-Minute Recipe Kit
Style: Imperial (Pale) Ale   7.5% alcohol by wt. / 9.4% alcohol by vol.   color: Copper
Do you like Dogfish Head Ale?  The beer style of Imperial Ale has gained popularity in recent years.  Our 90-minute version is probably the strongest beer you'll actually enjoy drinking, with more than twice the malt of a regular recipe! Think of this as the granddaddy of IPA; it's actually very similar to English Barleywine except for the fact that 90-minute uses American malt and hops.  And speaking of hops, this recipe contains more than any other in our collection!  Far stronger than your average IPA, full-bodied but decidedly non-sweet.  This beer's character is almost completely based on hop bitterness, flavor, and aroma.

Item #72721
Irish Pub Ale Recipe Kit
Style: Irish Pub Ale   3.2% alcohol by wt. / 3.9% alcohol by vol.   color: Red

Do you like Smithwick's Irish Ale? We had a lot of requests for this beer style, and since it's a favorite around here, we spent extra time working on this before it was released. The secret to the style is to achieve full, creamy body without undue sweetness. Most homebrew "clone" recipes just don't get it right. With the use of unmalted barley and a host of other British ingredients, this is a lovely smooth beer with low carbonation and very moderate hop levels, the beauty is in the mouthfeel.

Item #71251a
Lambic (Cherry) Recipe Kit
Style: Belgian Kriek Lambic   5.0% alcohol by wt. / 6.2% alcohol by vol.   color: red-amber

This is truly a connoisseur's beer.  It has tons of fruit flavor and aroma, with a tart sourness that comes from the presence of lactic acid bacteria in the fermentation.  The recipe includes over 6 pounds of sterile, seedless cherries, which saves you lots of time compared to removing seeds and crushing the fruit yourself. There's also 4 ounces of cherry flavoring, pectic enzyme, Belgian candi (beet) sugar, and a special live yeast culture with three strains of wild lambic bacteria. If you have a kegging system (cornelius/soda kegs), you can sweeten the beer just before force carbonation, and the results will be in the style of Lindemans lambic beers. If you use natural bottle conditioning, which includes mini-kegs or party pigs, the result will be a dry tart flavor similar to Liefmans lambic beers.

Item #71281a
Oktoberfest (Marzen) Recipe Kit
Style: German Marzen/Oktoberfest   3.8% alcohol by wt. / 4.8% alcohol by vol.   color: amber

Steinful is an Oktoberfest in the more modern tradition of the style. That means it's designed to be crisp, clean, and golden-amber colored rather than dark and bitter. This is by far our most popular German-style recipe kit - it enjoys top-ten recipe status all year long. Oktoberfest has less hop bitterness than traditional German beers like Bavarian pilsner and Bohemian pilsner. The flavor is that of malt with a slight sweetness. Steinful ferments well at a wide range of temperatures thanks to the "Tuborg" strain of lager yeast we use. A steady temperature between 50 and 74 degrees will give good results. Beers fermented at the warmer end of the temperature range will benefit from bottle aging, especially if you can refrigerate the bottles for a week or two after they've had a chance to develop carbonation.

Pale Ale (ULTIMATE) Recipe Kit
Style: American-Style IPA   4.4% alcohol by wt. / 5.5% alcohol by vol.   color: golden amber

Do you like Sierra Nevada Pale Ale?  We started designing this recipe to duplicate this famous microbrew.  This one came out a little stronger, but it was so good that we stuck with it.  Many customers who are big Sierra Nevada fans have reported that this recipe is even better - which is a great compliment!  This beer is not only one of our top 10 best-sellers, it's usually the top seller overall.  This award-winning recipe produces a medium-bodied American-style IPA with amber color and lots of hop character.  Ultimate Pale Ale includes 6 separate hop additions!  We use 8 pounds of quality malt extract, plus a blend of toasted malt and several crystal malts in this recipe, along with hops from Washington and Oregon.  Dave Miller (Author of "The Complete Handbook Of Homebrewing") judged this beer and called it "A very nice example of the style."

Pale Ale (Rockfish) Recipe Kit
Style: English-Style Pale Ale   4.1% alcohol by wt. / 5.1% alcohol by vol.   color: amber

Do you like Bass Ale?  Rockfish Ale was designed for fans of this popular British import, but Rockfish ale is a little bolder, a little stronger.  Rockfish Ale is one of our top 10 best-selling recipes.  It's a "Very British" pale ale, containing 3 British grains, British malt extract, British yeast strain, and 3 different British hops.  The result is a medium-bodied, amber-colored beer with nice aroma and head retention.  Hops for this recipe come in 5 separate additions!  Fortunately, there's plenty of malt flavor and caramel sweetness to balance the hops.  We've heard quite a few reports that Rockfish Ale has been used to change the opinions of people who don't like "homebrew" or "bitter beers" or "dark beers."  That's probably because although Pale Ales are very different than the big commercial beers they're accustomed to, a well-designed Pale Ale should make almost anybody happy.

Item #71351a
Pale Ale (Pepperpot) Recipe Kit
Style: English-Style Pale Ale   3.9% alcohol by wt. / 4.8% alcohol by vol.   color: amber

We're offering a second British Pale Ale - Pepperpot Pale ale - to satisfy popular demand.  Back in 1999 we had a promotional Pale Ale recipe kit that was such a huge success that our customers demanded more of them after the coupon ran out, so here it is!  Pepperpot Pale Ale has remained a best-seller.  Compared to Rockfish Ale, It features a little more caramel and toffee flavors, and cuts back a bit on hop flavor.  You'll enjoy the deep amber color, moderately full body, and clean flavor profile.  The "fruity" ester flavors (one person's wonderful fruity flavor is another person's dirty fermentation profile) which predominate so many microbrewed Pale Ales are very subdued in this recipe, due to the clean-tasting yeast strain used.  This is what makes the flavor of Pepperpot Ale so clean.  The effect is emphasized even more if you can ferment it at a slightly cooler temperature, in the range of 60-68 degrees, but normal room temperature also gives good results.

Do you like Yuengling Lager?  We developed Pennsylvania Lager in response to the incredible rise in popularity of this historic microbrew.  This recipe has more color and flavor than the beers from the big American megabreweries.  We use a special combination of barley malt extract, rice, and premium hops to make this recipe.  While this is a great beer all by itself, you can brew Pennsylvania Lager and Pennsylvania Porter to combine them in the glass for authentic Black & Tan.  Real Black & Tan flavor is derived from the combination of a lager and an ale, so you must ferment two separate beers to get it right.  You can also choose to combine the two beers at bottling time to create Black & Tan in each bottle.

Recipes are available in 3 different formulas; (1) Malt Extract w/ Steeping Grains, (2) Partial Mash, or (3) All Grain.

Raspberry Wheat Recipe Kit
Style: Fruit-Style Wheat Beer   5.0% alcohol by wt. / 6.2% alcohol by vol.   color: golden lavender

It takes a lot of ingredients to make a fruit-style wheat beer right, but the results are worth it!  After all, you can't expect much if you just throw some raspberry flavoring into a plain wheat beer. Our raspberry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless raspberry puree. The puree is seedless and sterile, which means you don't have to spend time removing tiny seeds and crushing fruit. The natural fruit sugar in the pureed raspberry has the bonus side effect of boosting the alcohol content! To round out the fruit profile, the recipe also includes 4 ounces of natural raspberry flavoring. At bottling time, add the raspberry flavoring until the beer is perfect for your taste.  Also included with this recipe is a packet of pectic enzyme, which is necessary to remove the haze caused by real fruit.

Recipes are available in 3 different formulas; (1) Malt Extract w/ Steeping Grains, (2) Partial Mash, or (3) All Grain.
