This might be the biggest, strongest beer you'll ever brew! Deep copper color, with very full body and intense malt flavor. The maltiness is balanced with plenty of imported British hops. This recipe comes with 14 pounds of malt extract and 7 ounces of hops! A beer this strong may taste a bit rough around the edges when it's young, but it's fantastic after some bottle aging time. We suggest aging this beer in bottles at room or basement temperature for at least 4-6 months for best flavor. It will continue to improve for over 2 years!

Belgian Dubbel Dark Trappist Ale

Style: Belgian Dark Trappist Ale

There is a lot of variation in Belgian and Belgian-style Trappist ales.  Our Belgian Dubbel recipe is brown in color, and moderate in alcohol strength. This recipe is all about malt - lots of malt flavor and aroma with a touch of cognac on the palate from the addition of imported Belgian candi sugar (beet sugar) and raw kosher honey. There is little or no hop bitterness, and no hop aroma. This beer is good to drink right away, but it also ages very nicely into a surprisingly mellow beverage.

Belgian Quad Trappist Ale

This is the strongest of the Trappist-style ales.  This is a beer that will hold up to many years of aging, and will definitely improve during its first year in the bottle.  Those choosing to keg this beer should set their system for a moderately low carbonation level, since the head-retention character of this beer is phenomenal!  With twice as much malt as a normal-strength beer, this is an extremely full-bodied, malty beer that's brewed with a combination of toasted, crystal, and de-husked roasted malts, and balanced with classic European hops.

Bock - Traditional German Dark Bock

Style: German-style Traditional Bock

A strong, full-flavored lager beer. Bock beer has big malty taste, deep copper color, and medium-full body. The flavors of malt and caramel dominate the moderate amount of hops used. There is no hop aroma. With 9.5 pounds of malt extract, we don't skimp on ingredients for our bock kits! (There are a lot of weak bock kits on the market.) This lager ferments well at any steady temperature between 48-65 degrees, but thanks to the "Tuborg" yeast strain we use, you also get good results at room temperature. Bocks fermented at room temperature will benefit from some extra bottle aging time.  Bock, like other strong lagers, benefits from cold aging. You should store the bottles at room temperature for at least 2-3 weeks while carbonation develops, then move the bottles to a cool place or into a refrigerator if you have space.

Bock - German Doppelbock

Style: German-style Doppelbock

This is a very strong, full-bodied lager beer. Doppelbock is the strongest of all German-style beers. Roasted malts contribute color to this beer, but the flavor is that of milder, sweeter malts. Alcohol content is quite high, and hop bitterness is just sufficient to prevent the malt sweetness from being cloying. However, hop bitterness is perceived as being low, while hop flavor and aroma are barely present.  With 11 pounds of malt extract, we don't skimp on ingredients for this one! (There are a lot of weak doppelbock kits on the market.) This is a very strong beer so the flavor will improve a lot with age, especially for the first 6 months. Store the bottles at room temperature for at least 2-3 weeks while carbonation develops, then move them to a cool location if you have one available.

American Brown Ale is a moderately malty beer, with the flavor and aroma of hops from the American northwest to add complexity. Imperial Stout - Russian Style

Very full bodied and quite strong.  Russian Imperial Stout has less hop bitterness than British Imperial Stout.  Legend has it that this style was brewed incredibly strong to survive the cold Russian winter. Russian Imperial Stout's aroma is predominantly malt and roasted malt instead of hops, is concentrates on the delicious flavors of caramel malt, roasted malt, and coffee-like roasted barley.  This beer is at its best after 8-12 weeks of bottle aging, and will continue to improve for months.  There may be too many weak "Imperial Stout" kits on the market, with 6 or 7 pounds of malt extract, but we don't skimp on this one!  Our Russian Imperial Stout recipe kit comes with 11 pounds of malt extract and 2 pounds of specialty grains.

Our "Martinak Dunkel" recipe is a dark German-style lager that isn't heavy. It has a clean malty flavor and aroma, deep color, and moderately light body. The flavor and aroma of toasted and roasted malt are dominant, due to the moderate amount of German hops used in this recipe. This lager ferments well at a wide range of fermentation temperatures, thanks to the special "Tuborg" family yeast strain we use. Good results can be achieved fermenting at temperatures between 50 and 74 degrees, so a good comfortable room or basement is all you need.

This is the "Light" version of our Munich Dunkel recipe kit.  Martinak Lite is an interesting beer, because it's a "Light" German-style beer that's dark in color and has more flavor than most other light beers.  Everything has been reduced a little bit compared to the regular-strength version.  Less malt and hops are used, which results in lower alcohol, calories, and carbohydrates.  The color is brown and body is very light.

We developed our Pennsylvania Porter recipe in response to the incredible rise in popularity of this historic microbrew. Pennsylvania Porter makes a medium-bodied porter with moderate hop and malt character.  This beer is milder than British-style porter. While this is a great beer all by itself, you can brew Pennsylvania Lager and Pennsylvania Porter to combine them in the glass for authentic Black & Tan. Real Black & Tan flavor is derived from the combination of a lager and an ale, so you must ferment two separate beers to get it right. You can also choose to combine the two beers at bottling time to create Black & Tan in each bottle.

Steel Mill Porter is our version of an ordinary porter.  These are moderate beers in body and flavor, with a deep reddish-brown color.  Porter does not have the full thick body that you would find in a stout.  Steel Mill Porter's sweet malt flavors are counterbalanced by roasted malt flavors.  The flavor and aroma of hops are also quite moderate and easy to enjoy.  All of the malt extract, grain, and hops used in this recipe are British imports.

Our "Woodbridge Porter" recipe is a modest brown porter which has benefited from the addition of honey.  The color is deep copper brown, the body is moderately full, and there is a wealth of honey-roasted malt aroma.  The malt aroma is reminiscent of roasted coffee thanks to the exclusive use of chocolate roasted malt for color.  The addition of honey yields complexity to an otherwise straightforward recipe, and also increases the alcohol content and mouthfeel of the beer. Hop flavor and aroma are moderate to low.

Ultimate Porter is our most popular porter recipe kit, based on a hard-to-find but fantastically good British porter with a funny name.  Ultimate Porter is one of out top 10 best-selling recipe kits.  The color is almost opaque black, like a stout, but Ultimate Porter doesn't have the full thick body of a stout.  The body is medium, and holding the glass up to light reveals beautiful red highlights in the deep black color. Compared to the ordinary porter, Ultimate Porter has more caramel, chocolate, and coffee-like roasted malt flavors. To make it Ultimate, we've added imported Demerara sugar and a highly-refined version of molasses called Black Treacle. Schwartzbier is an interesting style, but not one you'll find for sale very often. It's almost completely black, yet medium light-bodied - completely unlike a stout or porter. Besides a few microbreweries who brew Schwartzbier, the only one most of us can find in stores is Japan's Sapporo Black - and that's hardly ever imported nowadays. Schwartzbier has a nice roasted malt flavor yet it's easy-drinking and refreshing, with much livelier carbonation than stouts or porters. This is a great beer to introduce lager-loving friends to "the dark side," and you'll like it too!

Scotch Ale is a strong beer with the predominant flavor of malt.  Our "Angus' Kilt" recipe is a rich brown color and is dominated by sweet malty character, including caramel malt, chocolate malt, and a hint of smoked malt.  Hop bitterness is low; there is little hop flavor and nearly no hop aroma.  The beer is quite full bodies and forms a tight, lacy head when poured.

Chocolate Stout is similar to classic Irish-style stout, except that the dark grains used in Chocolate Stout include chocolate malt in addition to the roasted barley that's used in Irish Stouts.  As you would expect from a stout, this beer is very dark and full-bodied.  Chocolate malted barley is named for the color of the grain - it's dark brown when it comes out of the kiln.  The resulting flavor is something between chocolate and roasted coffee.  Instead of using chocolate or cocoa powder, which just makes the beer an oily mess, we include a liquor-grade chocolate flavoring extract with this recipe.  This is similar to the process used to make Young's Chocolate Stout.

A full-bodied beer with deep reddish-black color.  Don't expect this stout to taste really sweet, but it is significantly smoother, maltier, and less bitter than Irish stout. The use of lactose (milk sugar) in this recipe makes a very smooth beer, and also means that this isn't a great beer for the lactose intolerant. Lower hop bitterness allows the complex flavors of malt, caramel, and roasted grains to dominate, and a generous portion of raw barley give this beer full body and dense heading characteristics.

Oatmeal stout has an opaque black color and is very full bodied. In addition to raw barley, this beer owes its smooth texture to use of steel-rolled oats. This oatmeal also adds the characteristic flavor of the Oatmeal Stout to the roasted grain flavors and aromas of coffee, chocolate, and roasted malt.  Bitterness from hops and roasted grains is moderate, and are secondary to the malt character of the beer.

Our "Ice Melter" recipe makes a strong dark ale which is quite full-bodied and rich in flavor.  Alcohol content is high enough to achieve that "warming" feeling!  The recipe includes a special blend of 11 pounds of malt extracts, combined with three generous additions of American hops.  Noble-type hops are used for flavor and aroma.
