This might be the biggest, strongest beer you'll ever brew! Deep copper color, with very full body and intense malt flavor. The maltiness is balanced with plenty of imported British hops. Belgian Dubbel Dark Trappist Ale

There is a lot of variation in Belgian and Belgian-style Trappist ales.  Our Belgian Dubbel recipe is brown in color, and moderate in alcohol strength. This recipe is all about malt - lots of malt flavor and aroma with a touch of cognac on the palate from the addition of imported Belgian candi sugar (beet sugar) and raw kosher honey. There is little or no hop bitterness, and no hop aroma. This beer is good to drink right away, but it also ages very nicely into a surprisingly mellow beverage.

Belgian Trippel Trappist Pale Ale

Style: Belgian Golden Trappist Ale

There's a lot of variation in the Trappist style ales.  Our Belgian Trippel is relatively pale in color, has a strong bread-like maltiness, and it's stronger in alcohol.  No lactic acid bacteria are during fermentation, so there is no acidic sourness in the flavor profile.  Made with continental European hops, a combination of German and Belgian barley malts and Belgian candi sugar (beet sugar.)  Trippel should be bottle aged for at least 3-6 weeks, but will continue to improve for many months.

It takes a lot of ingredients to make a fruit-style wheat beer right, but the results are worth it!  After all, you can't expect much if you just throw some blackberry flavoring into a plain wheat beer. Our blackberry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless blackberry puree. The puree is seedless and sterile, which means you don't have to spend time removing tiny seeds and crushing fruit. The natural fruit sugar in the pureed blackberry has the bonus side effect of boosting the alcohol content! To round out the fruit profile, the recipe also includes 4 ounces of natural blackberry flavoring. A strong, full-flavored lager beer. Bock beer has big malty taste, deep copper color, and medium-full body. The flavors of malt and caramel dominate the moderate amount of hops used. There is no hop aroma. With 9.5 pounds of malt extract, we don't skimp on ingredients for our bock kits! (There are a lot of weak bock kits on the market.) This lager ferments well at any steady temperature between 48-65 degrees, but thanks to the "Tuborg" yeast strain we use, you also get good results at room temperature. Bocks fermented at room temperature will benefit from some extra bottle aging time.  Bock, like other strong lagers, benefits from cold aging. This is a very strong, full-bodied lager beer. Doppelbock is the strongest of all German-style beers. Roasted malts contribute color to this beer, but the flavor is that of milder, sweeter malts. Alcohol content is quite high, and hop bitterness is just sufficient to prevent the malt sweetness from being cloying. However, hop bitterness is perceived as being low, while hop flavor and aroma are barely present.  With 11 pounds of malt extract, we don't skimp on ingredients for this one! (There are a lot of weak doppelbock kits on the market.) This is a very strong beer so the flavor will improve a lot with age, especially for the first 6 months. Store the bottles at room temperature for at least 2-3 weeks while carbonation develops, then move them to a cool location if you have one available.

Weizenbock is another strong German beer.  But unlike the other bock styles, it's based on wheat malt and uses an ale-based Bavarian wheat beer yeast instead of a lager yeast. Do you like Anchor Steam™?

This recipe is in the same style, except this ULTIMATE version is stronger. We can't call it "steam beer" because Anchor Brewing Company has copyrighted the word, so now the beer style is officially "California Common." This is a special type of lager which is meant to be fermented at warmer temperatures. Although other lagers can be warm fermented, this one must be.  Fermentation temperatures of 65 to 72 degrees are ideal.  This Ultimate version has more of everything - more malt extract for greater body & higher alcohol content, and more hops. This is our version of a justifiably popular microbrew. Our "Assateague's Awesome Ale" recipe kit is a little bit hard to categorize: you could think of it as either a "Dark IPA" or a "Strong Brown Ale." The beer is brown in color, but has the high hop flavor and aroma of a pale ale or IPA. Very full bodied and quite strong.  Russian Imperial Stout has less hop bitterness than British Imperial Stout.  Legend has it that this style was brewed incredibly strong to survive the cold Russian winter. Russian Imperial Stout's aroma is predominantly malt and roasted malt instead of hops, is concentrates on the delicious flavors of caramel malt, roasted malt, and coffee-like roasted barley.  This beer is at its best after 8-12 weeks of bottle aging, and will continue to improve for months.  There may be too many weak "Imperial Stout" kits on the market, with 6 or 7 pounds of malt extract, but we don't skimp on this one!  Our Russian Imperial Stout recipe kit comes with 11 pounds of malt extract and 2 pounds of specialty grains.

This is truly a connoisseur's beer.  It has tons of fruit flavor and aroma, with a tart sourness that comes from the presence of lactic acid bacteria in the fermentation.  The recipe includes over 6 pounds of sterile, seedless cherries, which saves you lots of time compared to removing seeds and crushing the fruit yourself. There's also 4 ounces of cherry flavoring, pectic enzyme, Belgian candi (beet) sugar, and a special live yeast culture with three strains of wild lambic bacteria. Old ale is probably the strongest beer style that doesn't need long aging in order to taste good.  That's because it's well-balanced to avoid harshness when young.  Like all strong beers, however, it does improve with age.  Our "Thomas Nonsense!" recipe kit is very strong and medium-full bodied.  The color is deep copper to brown.  Malt characteristics are quite strong, and balanced by generous hop additions.  As it ages, these flavors marry... they blend and mellow each other.  Thomas Nonsense! contains not only British yeast strain, British hops, and British malt extract, but also two different British sugars.  The special sugars give Thomas Nonsense! the characteristic vinous (sherry or cognac-like) flavor of old ales.

It takes a lot of ingredients to make a fruit-style wheat beer right, but the results are worth it!  After all, you can't expect much if you just throw some raspberry flavoring into a plain wheat beer. Our raspberry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless raspberry puree. The puree is seedless and sterile, which means you don't have to spend time removing tiny seeds and crushing fruit. The natural fruit sugar in the pureed raspberry has the bonus side effect of boosting the alcohol content! To round out the fruit profile, the recipe also includes 4 ounces of natural raspberry flavoring. At bottling time, add the raspberry flavoring until the beer is perfect for your taste.  Also included with this recipe is a packet of pectic enzyme, which is necessary to remove the haze caused by real fruit.
