Amber Ale (ULTIMATE) Recipe Kit
Style: American-style Amber Ale   4.3% alcohol by wt. / 5.4% alcohol by vol.   color: amber

This recipe kit is one of our top ten best-sellers, with an inviting red-amber color with a rich white head. This recipe is a little stronger in every way than our regular amber ale recipe kit.  Like all of our "ULTIMATE" recipes, this one pushes the upper boundaries of the style. This beer is very popular with any group of beer drinkers. A medium-bodied beer with assertive hop characteristics and plenty of malt and caramel malt flavor.  This recipe uses a combination of British and American hops for flavor and aroma. Alcohol content is boosted, too.

Recipes are available in 3 different formulas; (1) Malt Extract w/ Steeping Grains, (2) Partial Mash, or (3) All Grain.

Item #71081a
Barleywine Recipe Kit
Style: English-style Barleywine   7.3% alcohol by wt. / 9.1% alcohol by vol.   color: copper

This is the biggest, strongest beer you'll ever brew! Deep copper color, with very full body and intense malt flavor. The maltiness is balanced with plenty of imported British hops. This recipe comes with 14 pounds of imported British malt extract and 7 ounces of hops! A beer this strong may taste a bit rough when it's young, but it's fantastic after some bottle aging time. We suggest aging this beer in bottles at room or basement temperature for at least 4-6 months for best flavor. It will continue to improve for over 2 years!

Item #71601a
Belgian Trippel Pale Trappist Ale Recipe Kit
Style: Belgian Pale Trappist Ale   5.8% alcohol by wt. / 7.2% alcohol by vol.   color: golden

There's a lot of variation in the Trappist style ales.  This one is relatively pale in color, but stronger in alcohol.  This isn't one of the Belgian styles which uses lactic acid bacteria during fermentation, so there is no acidic sourness in the flavor profile.  Made with continental European hops, a combination of German and Belgian barley malts and Belgian candi sugar (beet sugar.)  Trippel should be bottle aged for at least 4-6 weeks, but will continue to improve for many months.

Item #71681
Belgian Quad Recipe Kit
Style: Belgian Trappist Ale   7.4% alcohol by wt. / 9.2% alcohol by vol.   color: Copper

This is the strongest of the Trappist-style ales.  This is a beer that will hold up to many years of aging, and will definitely improve during its first year in the bottle.  Those choosing to keg this beer should set their system for a moderately low carbonation level, since the head-retention character of this beer is phenomenal!  With twice as much malt as a normal-strength beer, this is an extremely full-bodied, malty beer with just a touch of classic European hops.

Blueberry Wheat Beer Recipe Kit
Style: Fruit-Style Wheat Beer   5.0% alcohol by wt. / 6.2% alcohol by vol.   color: golden lavender

It takes a lot of ingredients to make a fruit-style wheat beer right, but the results are worth it!  After all, you can't expect much if you just throw some blueberry flavoring into a plain wheat beer. Our blueberry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless blueberry puree. The puree is seedless and sterile, which means you don't have to spend time removing tiny seeds and crushing fruit. The natural fruit sugar in the pureed blueberry has the bonus side effect of boosting the alcohol content! To round out the fruit profile, the recipe also includes 4 ounces of natural blueberry flavoring. At bottling time, add the blueberry flavoring until the beer is perfect for your taste.  Also included with this recipe is a packet of pectic enzyme, which is necessary to remove the haze caused by real fruit.

Item #71121a
Bock (Traditional Dark) Recipe Kit
Style: Traditional German Bock   5.1% alcohol by wt. / 6.3% alcohol by vol.   color: red-brown

A strong, full-flavored lager beer. Bock beer has big malty taste, deep copper color, and medium-full body. The flavors of malt and caramel dominate the moderate amount of hops used. There is no hop aroma. With 9.5 pounds of malt extract, we don't skimp on ingredients for our bock kits! (There are a lot of weak bock kits on the market.) This lager ferments well at any steady temperature between 48-65 degrees, but thanks to the "Tuborg" yeast strain we use, you also get good results at room temperature. Bocks fermented at room temperature will benefit from some extra bottle aging time.  Bock, like other strong lagers, benefits from cold aging. You should store the bottles at room temperature for at least 2-3 weeks while carbonation develops, then move the bottles to a cool place or into a refrigerator if you have space.

Item #71131a
Bock (German Helles/Maibock) Recipe Kit
Style: German Helles Bock/Maibock   5.1% alcohol by wt. / 6.3% alcohol by vol.   color: golden

This is the strongest light-colored German beer style. Intense gold color with very crisp and clean flavor. Maibock is less sweet and a bit lighter-bodied than the darker traditional bock beers. Maibock also has a bit more hops, but the dominant flavor is still that of malt. With more than 9 pounds of malt extract, we don't skimp on ingredients for our bock kits! (There are a lot of weak bock kits on the market.) This lager ferments well at any steady temperature between 48-65 degrees, but thanks to the "Tuborg" yeast strain we use, you also get good results at room temperature. Item #71541a
Bock (Doppelbock) Recipe Kit
Style: German Doppelbock   5.9% alcohol by wt. / 7.4% alcohol by vol.   color: brown

This is a very strong, full-bodied lager beer. Doppelbock is the strongest of all German-style beers. Roasted malts contribute color to this beer, but the flavor is that of milder, sweeter malts. Alcohol content is quite high, and hop bitterness is just sufficient to prevent the malt sweetness from being cloying. However, hop bitterness is perceived as being low, while hop flavor and aroma are barely present.  With 11 pounds of malt extract, we don't skimp on ingredients for this one! (There are a lot of weak doppelbock kits on the market.) This is a very strong beer so the flavor will improve a lot with age, especially for the first 6 months. Store the bottles at room temperature for at least 2-3 weeks while carbonation develops, then move them to a cool location if you have one available.

Item #71751
Bock (Weizenbock) Recipe Kit
Style: Weizenbock   5.3% alcohol by wt. / 6.6% alcohol by vol.   color: Amber

Weizenbock is another strong German beer, but unlike the other bock styles, it's based on wheat malt and uses an ale-based Bavarian wheat beer yeast instead of a lager yeast. It's very full-bodied and rich compared to other wheat beers, and while the hop level is modest, it's definitely part of the flavor profile.

Our cherry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless cherry puree. Item #71041a
Hopfest Brown Ale Recipe Kit
Style: Microbrewery-Style Hopfest   4.9% alcohol by wt. / 6.1% alcohol by vol.   color: brown

Do you like Pete's Wicked Ale? This is our version of a famous microbrew. Assateague's Awesome Ale is a little bit hard to categorize: think of it as either a "Dark IPA" or a "Strong Brown Ale." The beer is brown in color, but has the high hop flavor and aroma of a pale ale or IPA. The crisp hop bitterness is derived from generous portions of Northwestern US hops. There's also plenty of malt for body and strength, and a blend of specialty grains for color and aroma.

Item #71701
Imperial Ale 60-Minute Recipe Kit
Style: Imperial (Pale) Ale   5.0% alcohol by wt. / 6.2% alcohol by vol.   color: Amber
Do you like Dogfish Head Ale?  The beer style of Imperial Ale has gained popularity in recent years.  This one is a little stronger than your average IPA, and uses more hops than a normal IPA would.  Additionally, there is less non-fermentable sugar in the beer because crystal malt's presence is quite low.  The result is a medium-full bodied beer wit aggressive hop bitterness, rich hop flavor, and powerful hop aroma.

Item #71711
Imperial Ale 90-Minute Recipe Kit
Style: Imperial (Pale) Ale   7.5% alcohol by wt. / 9.4% alcohol by vol.   color: Copper
Do you like Dogfish Head Ale?  The beer style of Imperial Ale has gained popularity in recent years.  Our 90-minute version is probably the strongest beer you'll actually enjoy drinking, with more than twice the malt of a regular recipe! Think of this as the granddaddy of IPA; it's actually very similar to English Barleywine except for the fact that 90-minute uses American malt and hops.  And speaking of hops, this recipe contains more than any other in our collection!  Far stronger than your average IPA, full-bodied but decidedly non-sweet.  This beer's character is almost completely based on hop bitterness, flavor, and aroma.

Very full bodied and quite strong.  Russian Imperial Stout has less hop bitterness than British Imperial Stout. The aroma is predominantly malt and roasted malt instead of hops.  Russian Imperial Stout concentrates on the delicious flavors of caramel malt, roasted malt, and coffee-like roasted barley.  This beer is at its best after 8-12 weeks of bottle aging, and will continue to improve for months.  There are a lot of weak "Imperial Stout" recipe kits on the market, they come with 6 or 7 pounds of malt extract.  But we don't skimp on these - our Russian Imperial Stout recipe kit comes with 11 pounds of malt extract.

Item #71251a
Lambic (Cherry) Recipe Kit
Style: Belgian Kriek Lambic   5.0% alcohol by wt. / 6.2% alcohol by vol.   color: red-amber

This is truly a connoisseur's beer.  It has tons of fruit flavor and aroma, with a tart sourness that comes from the presence of lactic acid bacteria in the fermentation.  The recipe includes over 6 pounds of sterile, seedless cherries, which saves you lots of time compared to removing seeds and crushing the fruit yourself. There's also 4 ounces of cherry flavoring, pectic enzyme, Belgian candi (beet) sugar, and a special live yeast culture with three strains of wild lambic bacteria. If you have a kegging system (cornelius/soda kegs), you can sweeten the beer just before force carbonation, and the results will be in the style of Lindemans lambic beers. If you use natural bottle conditioning, which includes mini-kegs or party pigs, the result will be a dry tart flavor similar to Liefmans lambic beers.

Item #71321a
Old Ale (British Strong Ale) Recipe Kit
Style: English-Style Old/Strong Ale   6.1% alcohol by wt. / 7.6% alcohol by vol.   color: brown

Old ale is probably the strongest beer style that doesn't need long aging in order to taste good.  That's because it's well-balanced to avoid harshness when young.  Like all strong beers, however, it does improve with age.  Thomas Nonsense! is very strong and medium-full bodied.  The color is deep copper to brown.  Malt characteristics are quite strong, and balanced by generous hop additions.  As it ages, these flavors "marry" meaning that they seem to blend and mellow each other.  Thomas Nonsense! contains not only British yeast strain, British hops, and British malt extract, but also two different British sugars.  The special sugars give Thomas Nonsense! the characteristic vinous (sherry or cognac-like) flavor of old ales.

Do you like Sierra Nevada Pale Ale?  We started designing this recipe to duplicate this famous microbrew.  This one came out a little stronger, but it was so good that we stuck with it.  Many customers who are big Sierra Nevada fans have reported that this recipe is even better - which is a great compliment!  This beer is not only one of our top 10 best-sellers, it's usually the top seller overall.  This award-winning recipe produces a medium-bodied American-style IPA with amber color and lots of hop character.  Ultimate Pale Ale includes 6 separate hop additions!  We use 8 pounds of quality malt extract, plus a blend of toasted malt and several crystal malts in this recipe, along with hops from Washington and Oregon.  Dave Miller (Author of "The Complete Handbook Of Homebrewing") judged this beer and called it "A very nice example of the style."
