Item #71081a
Barleywine

Style: English-style Barleywine
ABV: 9.8%
Color: Dark Copper Brown

This might be the biggest, strongest beer you'll ever brew! Deep copper color, with very full body and intense malt flavor. The maltiness is balanced with plenty of imported British hops. This recipe comes with 14 pounds of malt extract and 7 ounces of hops! A beer this strong may taste a bit rough around the edges when it's young, but it's fantastic after some bottle aging time. We suggest aging this beer in bottles at room or basement temperature for at least 4-6 months for best flavor. It will continue to improve for over 2 years!

Item #71821
Belgian Imperial Pale Ale
Style: Belgian-Style Imperial Pale Ale
ABV: 8.5%
Color: Amber

Do you like Flying Dog Brewery's Raging Bitch Ale?

This is a very strong Imperial-style IPA with a unique Belgian twist.  The style originated in America, and just like the Flying Dog original, we use American malts and hops.  This recipe's Belgian influence is derived from the yeast.  Hoppy but not as intensely bitter as some other Imperial pale ales, with plenty of citrusy hops from the northwestern US added for flavor and aroma.

Item #71171a
California Common - Ultimate Series

Style: California Common Beer
ABV: 5.5%
Color: Amber

Do you like Anchor Steam™?

This recipe is in the same style, except this ULTIMATE version is stronger. We can't call it "steam beer" because Anchor Brewing Company has copyrighted the word, so now the beer style is officially "California Common." This is a special type of lager which is meant to be fermented at warmer temperatures. Although other lagers can be warm fermented, this one must be.  Fermentation temperatures of 65 to 72 degrees are ideal.  This Ultimate version has more of everything - more malt extract for greater body & higher alcohol content, and more hops. The result is a remarkably balanced beer that's strong and hearty without going over the top.

Item #71041a
Hopfest Brown Ale

Style: American Seasonal Brown Ale
ABV: 6.2%
Color: Brown

Do you like Pete's Wicked Ale™?

This is our version of a justifiably popular microbrew. Our "Assateague's Awesome Ale" recipe kit is a little bit hard to categorize: you could think of it as either a "Dark IPA" or a "Strong Brown Ale." The beer is brown in color, but has the high hop flavor and aroma of a pale ale or IPA. The crisp hop bitterness is derived from generous portions of Northwestern US hops, with German and English hops also present in the mix. There's also plenty of malt for body and strength, and a blend of specialty grains for color and aroma.

Item #71701
Imperial Ale - 60 Minute

Style: American Imperial Pale Ale
ABV: 6.0%
Color: Golden

Do you like Dogfish Head 60-Minute IPA™?

The Imperial Pale Ale style has gained popularity in recent years.  Rocketing straight to our top-ten most popular recipes in less than a year, this one is guaranteed to make all hop-heads smile.  A little stronger than your average IPA, and with more hops than a normal IPA would contain.  Additionally, there is less non-fermentable sugar in the beer because crystal malt's presence is quite low.  The result is a medium-full bodied beer wit aggressive hop bitterness, rich hop flavor, and powerful hop aroma.

Item #71711
Imperial Ale - 90 Minute

Style: American Imperial Pale Ale
ABV: 8.75%
Color: Amber

Do you like Dogfish Head 90-Minute IPA™?

The Imperial Pale Ale style has gained popularity in recent years.  Our 90-minute version just might be the strongest pale ale you'll actually enjoy drinking, with more than twice the malt of a regular recipe! Think of this as the granddaddy of IPA; it's actually very similar to English Barleywine except for the fact that 90-minute uses American malt and hops.  And speaking of hops, this recipe contains more than almost any other in our collection!  Far stronger than your average IPA, full-bodied but decidedly non-sweet.  This beer's character is almost completely based on hop bitterness, flavor, and aroma.

Item #71221a
Imperial Stout - British Style

Style: English-style Imperial Stout
ABV: 7.4%
Color: Black

Very full-bodied and quite strong, much stronger than the standard Irish-style stout. Surprisingly smooth after only a few weeks of aging, it becomes truly special after a few months in the bottle. This beer boasts a rich blend of roasted malt, chocolate, and coffee-like flavors. There may be plenty of weak "Imperial Stout" kits on the market, with 6 or 7 pounds of malt extract... but we don't skimp on this one - it includes 10 pounds of malt extract plus 2 pounds of specialty grains!

Item #71761
Oktoberfest - Ultimate Series

Style: Specialty Oktoberfest
ABV: 7.8%
Color: Amber

Our regular Oktoberfest recipe kit has become a best-seller, but we had people asking for a stronger version. Well, here it is! We increased the alcohol content by including more malt extract, plus enough German hops to put a bit more edge on this version of Oktoberfest. If you're a fan of strong, hoppy beers and want to celebrate the German way, this is just the ticket!  Ultimate Oktoberfest uses a combination on Pale, Munich, and Crystal malts to achieve rich malty flavor and full body.

Item #71321a
Old Ale - British Style Strong Ale

Style: English Old Ale / Strong Ale
ABV: 7.7%
Color: Amber

Old ale is probably the strongest beer style that doesn't need long aging in order to taste good.  That's because it's well-balanced to avoid harshness when young.  Like all strong beers, however, it does improve with age.  Our "Thomas Nonsense!" recipe kit is very strong and medium-full bodied.  The color is deep copper to brown.  Malt characteristics are quite strong, and balanced by generous hop additions.  As it ages, these flavors marry... they blend and mellow each other.  Thomas Nonsense! contains not only British yeast strain, British hops, and British malt extract, but also two different British sugars.  The special sugars give Thomas Nonsense! the characteristic vinous (sherry or cognac-like) flavor of old ales.

Item #71331a
Pale Ale - Ultimate Series

Style: American IPA
ABV: 5.9%
Color: Amber

Do you like Sierra Nevada Pale Ale?

We started designing this recipe to duplicate this famous microbrew.  In the end, our Ultimate IPA came out a little stronger, but it was so good that we stuck with it.  Many customers who are big Sierra Nevada fans have reported that this recipe is even better, which is a great compliment!  This beer is not only one of our top 10 best-sellers, it's often the top seller.  This award-winning recipe produces a medium-bodied American-style IPA with amber color and lots of hop character.  Ultimate Pale Ale includes 6 separate hop additions!  We use 8 pounds of quality malt extract, plus a blend of toasted malt and several crystal malts in this recipe, along with hops from Washington and Oregon.  Dave Miller (author of "The Complete Handbook Of Homebrewing") once judged this beer and called it "A very nice example of the style."

Item #71371a
Pilsner - Czech Style

Style: Czech-Style Pilsener
ABV: 4.9%
Color: Golden

Do you like Pilsner Urquell or Budvar?

This is our version of the style that originated the Pilsner name.  Czech pilsner is a moderately-light bodied beer with golden color.  Imported hops from the Czech Republic and Germany are used for flavor and aroma.  Our "Home Brewdvar" recipe uses a large amount of relatively low-power hops to achieve its highly-hopped flavor, so it's rich in secondary hop characteristics instead of just plain bitterness.  This recipe ferments well at a wide range of fermentation temperatures, thanks to the authentic Czech strain of "Tuborg" pilsner yeast we use.  Good results can be achieved at temperatures between 50 and 74 degrees, so a good comfortable room or basement is all you need.  Czech Pilsner that's warm-fermented will mellow out a lot if you give the bottles some cold lagering time in the refrigerator after they've had a chance to carbonate.

Do you like Stone's Arrogant Bastard Ale™?

We know this beer has a lot of fans, so we put together this recipe as a special tribute.  This is a big beer - stronger than all but the craziest Imperial Ales.  The darker color and maltier texture are derived from a combination of crystal malt, chocolate malt, honey malt, and special roasted malt.  With more than 6 ounces of hops, the recipe has plenty of bite, with heady aroma from generous dry hopping.
