Do you like Magic Hat Number 9™ Ale?

The secret to that famous microbrewed ale is Apricot, and we've been eager to introduce our own version. This is a relatively straightforward American-style Pale Ale with a modest hop profile, with the addition of three pounds of seedless apricots PLUS natural apricot flavor extract. Those extra ingredients don't make this recipe any harder to brew, and the results are worth a few extra bucks!

Blackberry Wheat

It takes a lot of ingredients to make a fruit-style wheat beer right, but the results are worth it!  After all, you can't expect much if you just throw some blackberry flavoring into a plain wheat beer. Our blackberry wheat recipe kit starts with a full strength wheat beer, which is designed to be very mild so it won't overpower the delicate fruit flavor. Then we add 3 pounds of seedless blackberry puree. The puree is seedless and sterile, which means you don't have to spend time removing tiny seeds and crushing fruit. The natural fruit sugar in the pureed blackberry has the bonus side effect of boosting the alcohol content! To round out the fruit profile, the recipe also includes 4 ounces of natural blackberry flavoring. At bottling time, add the blackberry flavoring until the beer is perfect for your taste.  Also included with this recipe is a packet of pectic enzyme, which is necessary to remove the haze caused by real fruit.

Strawberry Blond

Style: Specialty Fruit Beer
ABV: 4.2%
Color: Golden with a hint of rose tint

Everyone loves this style, but we had a tough time replicating it. Real strawberries added to blond ale were messy and lacked enough "punch" to effect the flavor, and regular strawberry extracts tasted very fake - or they tasted like the wrong thing. Finally we found a great natural strawberry extract that did the job, just remember to refrigerate it (along with the yeast) when it arrives. This is a golden-colored beer with a hint of pink, and the hops are present but toned-down to allow strawberries to shine through.

Summer Lemon Ale

Style: Specialty Fruit-style Blond Ale
ABV: 4.2%

This is a very refreshing beer, with medium body and a moderate hopping level that compliments the fruit flavor rather than competing with it. After experimenting with real lemon juice (too acidic!) we settled on a great natural lemon extract that works perfectly with this style. The lemon flavoring extract we use doesn't have preservatives in it, so remember to refrigerate the little lemon extract packet when you unpack your shipment.

Wit Beer - Belgian Witbier

Style: Belgian-Style Wit
ABV: 4.9%
Color: Golden

Wit beer is a very pale beer that's served cloudy.  This recipe has a moderately light body and a low level of flavor and aroma hops.  It's a light and delicate wheat beer made with a special yeast culture that produces flavors which are tart and slightly phenolic. This recipe is also spiced with coriander and curacao orange peel in addition to noble hops. Witbier is different from other wheat beers not only because of the spices, but also due to the use of raw, unmalted wheat.
