Item #53012 Potassium Sorbate Stabilizer for wine, it prevents renewed fermentation after sweetening. Also prevents vinegar formation.
Necessary when sweetening wine. Best used in combination with potassium metabisulfite. If used without potassium metabisulfite, you run a very real risk of creating geraniol in your wine. Geraniol isn't dangerous, but it tastes nasty. Package Size:1 ounce bottle $2.49 1 pound bulk bag $15.99 Quantity:
Item #28208 Potassium Metabisulphite An indispensable ingredient for winemaking.
A powerful antioxidant that gives wine a long shelf life. Add during second rackings, and again when bottling. Also used to make contact sterilizing solution (sulfite solution) when mixed at a rate of 1/2 ounce per quart of water. This is so powerful it can be sprayed onto large items. Package Size:2 ounce bottle $2.49 1 pound bag $5.99 Quantity:
Item #28210 Campden Tablets, bottle of 100 Our campden tablets are potassium metabisulfite! (We don't sell the cheaper, less effective sodium metabisulfite version.)
Best used for killing wild yeast, mold, and bacteria found on fruit. Also good for adding to hot water when soaking corks. After crushing or pressing fruit, add 1-2 finely crushed Campden tablets per gallon and let sit overnight. This will kill off wild yeast and many bacteria, and protect the crushed fruit from oxidation. Add good quality wine yeast the next day.
Campden tablets are not ideal for making sterilizing solution; better products are available. They're also not ideal for stabilizing wine fore bottling - It's better to use pure potassium metabisulfite for that purpose.
Package Size:100 Tablets $3.991 pound (over 700 tablets) $16.99 Quantity:
Especially useful if your recipe contains apples or berries. Add when pitching yeast. Price: $2.99 Quantity:

Item #53017 Potassium Bicarbonate (acid reducer) Powerful, effective acid reducer. Works well after fermentation, unlike chalk or calcium carbonate.
